Steps:
- Grate the vegetables coarsely & toss together with the thyme & red onion. Break up the mince with a fork, add the vegetables & season, then lightly knead the mixture together.
- Divide into 4 & firmly press into a burger shape. Chill until required.
- Brush each burger with oil.Fry them in a non-stick griddle pan for 3-4 minutes on each side until cooked through; there should be no pink juices.
- Serve either in toasted buns with relish or with a leafy green salad.

These veggie burgers are hearty, savory, and rich in meaty flavor, thanks to cremini mushrooms, rice, black beans, and walnuts. Your family may think you made them with real meat! Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with foil.
- Place mushrooms and onion on the prepared baking sheet. Drizzle with 1 tablespoon oil and toss to coat.
- Roast in the preheated oven for 10 minutes. Reduce heat to 425 degrees F (220 degrees C) and add black beans to the pan. Cook until mushrooms and onions are browned and beans are dried on the surface, about 5 more minutes.
- Remove from the oven and let mixture cool for 10 minutes.
- Transfer mixture to a food processor. Add rice and walnuts and pulse until roughly chopped. Add Worcestershire sauce, ketchup, soy sauce, garlic powder, paprika, chili powder, 1/2 teaspoon salt, and 1/2 teaspoon pepper and pulse until just combined. Add egg and pulse until just combined.
- Transfer mixture to a medium bowl and fold in bread crumbs until well mixed. Chill for 10 minutes.
- Form mixture into 8 patties and season each with salt and pepper.
- Heat 1 tablespoon oil in a large skillet. Add 4 patties and cook, undisturbed, until browned and a nice crust has formed, about 4 minutes. Flip and cook until done, 4 to 5 more minutes. Top with Muenster cheese and place on toasted buns.
- Add remaining 1 tablespoon oil to the skillet and repeat to cook remaining patties.

This recipe is great for helping your children get some of the 5 a day veg required-to add to the fun,you can be brave and let them help making them,this does seem to encourage them to eat some,and is a great holiday rainy day fun time to introduce children to cooking, These "burgers freeze well (I use a well washed empty ice cream tub) and can be re-cooked from frozen.

- Boil and mash the potatoes,allow to cool whilst you just bring the vegetables to the boil,(the crunch makes them tasty)then drain the veg and sat aside to cool a little.
- Mix the cheese and onion into the potato,and add the veg.
- At this point,you can ask the children to help by dividing the mixture into 2 or three bowls,and mix all the ingredients together thoroughly with your HANDS (kids LOVE THIS)!
- Now-for the mixture into thin burger shapes,empty the breadcrumbs into a bowl and coat each side of each burger (it should make 10 good size burgers- 2 per person) with the breadcrumbs.
- Lay in a non stick baking tray or on a sheet of baking paper in the grill pan.
- Drizzle over a little oil to help brown and crisp if desired (it does help-but only a small amount is required).
- Bake in a preheated oven on gas mark 6 for 20 minutes a side.
- Enjoy!

A good friend gave me this recipe forever ago... It's a great way to use up your veggies or impress vegetarian guests. This recipe can easily be doubled for the whole family to enjoy.

Steps:
- Spray pan with cooking spray.
- Add chopped veggies and cook on medium heat for about 5 minutes, or until tender.
- Crush beans and mix in egg and bread crumbs.
- Spoon into 4 equal patties on a cookie sheet coated with non stick spray.
- Bake at 375 - 400 degrees for 20 minutes.
- Flip burgers and cook for another 10 - 15 minutes.

EASY VEGGIE BURGERS
These burgers have been tested and approved by my DD. The original recipe is from Chatelaine. The original name of this recipe is "Amazing Veggie Burgers".

Steps:
- Drain and rinse beans with cold water.
- Drain again and pat dry with paper towels.
- Add beans, onions, garlic, egg, 2 tbsp barbecue sauce, Worcestershire sauce, oil, salt and pepper to food processor.
- Pulse until beans are the size of peas.
- Place pulsed mixture into a large bowl.
- Add flour and stir until evenly mixed.
- Add bread crumbs and mix well.
- Add cheese and mix with your hands (mixture is thick).
- Divide mixture into six portions.
- Flour your hands and shape into 1/2-inch thick burgers (if you don't flour your hands the mixture will stick to them).
- The burgers may be refrigerated in a sealed container for 1 day or frozen until ready to grill.
- Oil your grill and preheat grill to medium-high.
- Place burgers on grill.
- Brush with remaining barbecue sauce.
- Barbecue with lid down until hot, turning once, for 8 to 10 minutes.
- Serve on buns with desired toppings i.e. pickles, onions, tomatoes, salsa.
- For vegetarian make sure you use either a vegetarian Worcestershire sauce or the soy sauce.
