Put your 14 to 16 cup rice cooker to use and make this sweet and delicious applesauce, made in your rice cooker! Use Empire State or Gala apples. The result is a chunky, delicious applesauce that is an appealing (or apple-peel-ing) and pleasurable alternative to cranberry sauce for the holiday table. Also a delicious topping for vanilla ice cream.

Steps:
- Place apples and raspberries in the rice cooker; add brown sugar, cinnamon, and nutmeg. Add honey, vanilla extract, lemon juice, and water, in respective order.
- Set rice cooker to standard "cook" setting, about 30 minutes. Stir mixture halfway through cooking cycle, mashing apples a little bit.
- Remove the applesauce from the heat and cool for 30 minutes. Transfer applesauce to a bowl and chill in the refrigerator for at least 1 hour.

RASPBERRY APPLESAUCE
I altered a basic applesauce recipe to come up with this flavored version. Other variations can be made by substituting another flavor of jam for the raspberry. Depending on how sweet your apples are and how you like your applesauce, you may need to add a little sugar in with the jam. I used a combination of Macintosh and Red Delicious with about 1/3 cup jam, and thought it was fine without added sugar.

- In a large saucepan, combine apples with 1 cinnamon stick, jam, and water; bring to a boil.

RASPBERRY ROASTED APPLESAUCE

- Preheat the oven to 350 degrees F.
- Place the zest and juice of the oranges and lemon in a large (11-inch) ovenproof pot or Dutch oven, such as Le Creuset. Peel, quarter, and core the apples and add them to the pot, tossing them with the juices as you go.

All raspberry sauces need not be created equal. Unlike the previous sauce, this one is loaded with big, chunky raspberries. It was inspired by a sauce that baking guru Nick Malgieri whizzed up during a cooking demonstration, and I've been making it ever since.
Yield makes 1 cup (250 ml)

- Purée 1 cup (115 g) of the raspberries with 3 tablespoons (45 g) sugar in a food processor until smooth. Put the remaining raspberries in a bowl. Set a mesh strainer over the bowl and press the purée through the strainer over the raspberries. Stir the purée together with the whole raspberries, mashing the berries just a bit as you stir. Add the lemon juice. Taste, then add the additional tablespoon of sugar if you wish. Serve chilled or at room temperature.
- This sauce can be stored in the refrigerator for up to 3 days.
