CINNAMON ROLL COOKIES

These cinnamon roll cookies are a new twist to the cinnamony snickerdoodle cookie.

Cinnamon Roll Cookies image

Steps:

  • Sift together all-purpose flour, baking soda, and salt in a bowl.
  • Beat together butter and shortening using an electric mixer in another bowl until combined; add sugar and continue beating until light and fluffy, about 5 minutes. Pour in eggs, one at a time, beating well after each addition. Pour in flour mixture and blend until batter is smooth.
  • Dust a work surface with flour and roll out cookie dough with a floured rolling pin into a 1/4-inch thick rectangle. Sprinkle cinnamon generously over the dough. Roll up the dough gently into a log starting on one of the long sides. Wrap tightly in plastic wrap and refrigerate for 2 to 3 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Unwrap the dough log and carefully slice into 1/4-inch pieces without smashing down the cookie. Place on an ungreased baking sheet.
  • Bake in the preheated oven until lightly golden around the edges, about 12 minutes.

Steps:

  • In large bowl, beat 1 cup of the butter, 1/2 cup of the powdered sugar and the salt with electric mixer on medium speed about2 minutes or until creamy. Beat in 1/4 teaspoon of the almond extract. On low speed, beat in flour just until combined. Cover; refrigerate 30 minutes.
  • Heat oven to 350°F. Line cookie sheets with cooking parchment paper. Shape dough into 48 (3/4-inch) balls. Roll 16 balls in each color of sanding sugar, coating completely. On cookie sheets, place balls 1 inch apart.
  • Bake 15 minutes or until set and bottoms are light golden brown. Remove from cookie sheets to cooling racks. Cool completely, about 30 minutes. In small bowl, beat remaining 1/4 cup butter, 1 cup powdered sugar, 1/4 teaspoon almond extract and the milk with electric mixer on medium speed until smooth. For each sandwich cookie, spread about 1/2 teaspoon filling on bottom of 1 cookie; top with second cookie, bottom side down, to form ball.

Steps:

  • 1. Preheat oven to 375 degree F. In a medium bowl, cream butter, beat in flour and confectioners' sugar. Now, beat on pecans. The mix will look crumbly.
  • 2. I pinch enough out of the bowl, to make a ball about the size of a large marble. Shape into balls and place on baking sheet.
  • 3. Bake for 10 minutes, then carefully roll in cinnamon sugar mixture. These are tender cookies, so be careful coating them. Don't squeeze hard on them.
  • 4. Place on racks to cool. Enjoy, so yummy!

1 stick softened, butter
3 Tbsp confectioners' sugar
1 c each - flour & fine chopped pecans

  • In a mixer bowl, cream together sugar and butter; beat in egg and vanilla.
  • Combine flour, cinnamon, baking powder and salt.
  • Add to butter mixture.
  • Blend well.

Steps:

  • Beat the butter, muscovado sugar, caster sugar and 2 tsp cinnamon together with an electric whisk for 2-3 mins until well-combined. Add the egg, flour, baking powder and raisins, if using, and continue to beat until the mixture becomes a uniform dough. Roll tablespoons of the dough into balls between the palms your hands (you should have 12-15). Chill in the fridge for at least 2 hrs until firm, or overnight. The unbaked dough balls will keep in an airtight container in the freezer for up to three months (see tip, below).
  • Heat the oven to 180C/160C fan/ gas 4 and line two large baking trays with baking parchment. Place the dough balls 3-4cm apart on the prepared baking trays to allow the mixture to spread without touching. Bake for 10-12 mins until lightly golden at the edges but still soft and gooey in the centre. Leave to cool completely on the baking trays.
  • Mix the icing sugar with the remaining cinnamon, then dust over the cookies. Will keep in an airtight container for up to five days.

Steps:

  • Mix the almonds, sugar and cinnamon together in a medium bowl.
  • Whisk the egg whites in a separate bowl until they begin to stiffen.
  • Fold whisked egg whites into the dry mixture until the combination is fairly firm.
  • Use your hands to roll the mixture into pecan-sized balls and place these onto a greased baking sheet.
  • Bake for about 15 minutes at 350 degrees F.
  • Remove from oven and use a metal spatula to separate the balls from the baking sheet before they cool too much.
