DELICIOUS CINNAMON ROLLS (ABM)

Somehow, just the scent of cinnamon rolls bring to mind a warm and cozy house. I had a real estate agent tell me to bake something with cinnamon when showing my house. Cinnamon is comforting, so get comforting! Prep time and servings will vary. These two are guestimated.I almost forgot, I sold my house! Sometimes I add a little maple flavoring or orange juice to my icing, just for something different.

Delicious Cinnamon Rolls (Abm) image

Steps:

  • Add the ingredients to bread machine as recommended by manufacturer. Program for the bread cycle. When cycle is done, place dough on floured surface. Knead dough about 1 minute, then let rest for 15 minutes.
  • Roll dough into a rectangle, about 15x10-inches. Spread 1/4 cup melted butter over dough to within 1 inch of edges. Then sprinkle 1/4 cup sugar, the cinnamon, nutmeg, and chopped nuts evenly over dough. Roll dough up tightly on long side. Press edges to seal and form into a 12-inch long, evenly shaped roll. With a knife or 8-inch long piece of dental floss, cut roll into 1-inch pieces.
  • Place rolls cut side down into a greased 13x9 inch baking pan. Cover and let rise in warm, draft free place until doubled in size, about 30 to 45 minutes.
  • Bake in preheated 375°F oven for 20 to 25 minutes or until golden brown. Cool in pan on rack for 10 to 15 minutes. While the rolls are cooling, make the icing by combining powdered sugar with 1 to 2 tablespoons milk and 1/2 teaspoons vanilla. Blend until smooth. If too thin, add more powdered sugar, too thin, add more milk, until desired consistency is reached.
  • Cut apart and remove from pan.

1 large egg
4 tablespoons butter or 4 tablespoons margarine
3 1/3 cups bread flour
3 tablespoons sugar
1/2 teaspoon salt
1 1/2 teaspoons bread machine yeast or 1 1/2 teaspoons fast rising yeast
1/4 cup butter, melted
1/4 cup sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/3 cup nuts, lightly toasted, chopped
1 cup powdered sugar
1 -2 tablespoon milk
1/2 teaspoon vanilla

SOURDOUGH CINNAMON BUNS

Use a sourdough starter to make these moreish cinnamon buns. It adds a contrasting tang to the classic sweet and sticky flavours. Top with a soft cheese icing, if you like

Steps:

  • Make sure your starter is active - it should be nice and bubbly. If it isn't, feed it and wait until a tsp of the starter floats in warm water.
  • Tip all the ingredients for the dough, except the butter, into a bowl and mix with your hands to form a shaggy dough - make sure all the flour from around the bowl is mixed in. Leave the dough in the bowl, covered with a damp cloth, for 30 mins.
  • Work the butter into the dough with 1 tsp salt. Once fully combined, tip the dough onto a surface and knead gently for 5 mins until smooth and springy. Form the dough into a ball and sit back in the bowl. Cover and leave somewhere warm-ish for 3-4 hrs until the dough has just about doubled in size.
  • Meanwhile, make the filling by beating together the sugar, butter, cinnamon and a pinch of salt. Set aside at room temperature to keep soft.
  • Butter and line a square baking tin - smaller tins (20 x 20cm) will hold nine buns, larger tins (25 x 25cm) will hold 12. Tip the dough onto a floured surface and roll it to a rectangle roughly 50 x 25cm. Spread the filling over the rectangle so it's completely covered. Roll the dough along the long edge into a tight swiss-roll type sausage. Cut your dough into pieces and arrange them, spiral side-up, in the tin. Leave for 1 hr at room temperature, then cover and leave in the fridge overnight.
  • Heat the oven to 200C/180C fan/gas 6. Cover the tin with foil and bake on a baking tray (this will stop any leaking mixture dripping into your oven) for 30 mins, then remove the foil and bake for 10-15 mins more to brown slightly.
  • Meanwhile, mix the golden syrup with 1 tbsp boiling water. As soon as buns come out of the oven, brush them generously with the syrup, then leave to cool a little. Lift the buns out of the tin while still warm and leave to cool on a wire rack. To make the icing, beat the soft cheese, sugar and vanilla until thick but drizzly. Drizzle over the buns when completely cool.

This the only recipe I use for everything now. If you live outside Canada your flour may not have the high protein/gluten that our Canadian milled flours have. You may wish to use bread flour. Makes delicious cinnamon buns also.

Hot Dog/Hamburger Buns/Rolls/Cinnamon Buns Dough Cycle A.b.m. image

Steps:

  • Place all ingredients in order recommended by your bread machine manufacturer.
  • Select dough cycle and start machine.
  • I preheat my oven to 100°F and turn off.
  • When dough cycle is complete remove from machine and proceed.
  • I roll into a long log and cut into 12 pieces for hot dog buns or 9 pieces for large hamburger buns.
  • How big you want them is up to you.
  • For Hot Dog Buns, I roll out till they look like long skinny wieners,.
  • Hamburger Buns, I flatten with my palm till about the thickness of a pancake. They rise beautifully and look as nicely shaped as store bought ones.
  • Put on parchment-lined baking sheet so sides are almost touching.
  • You can brush with melted butter if you wish but I never bother.
  • Cover with cloth and put in the warm oven for 45-60 minutes to rise.
  • When doubled remove from oven.
  • I bake mine on the top shelf in my oven.
  • Turn oven to 400°F and when you put the buns in the oven, reduce temperature immediately to 375° and bake hot dog buns 15 minutes and hamburger buns 17 minutes.
  • CINNAMON BUNS. Use 1/3 cup sugar in recipe. Made 10 large buns.
  • Roll out to about 12 x 15" and spread with butter or margarine. Sprinkle cinnamon-sugar mixture over all and roll up tightly. Cut into as many buns as you want. I make 10.
  • Set oven to 400° and turn down to 375° when you put buns inches Bake 20 minutes.

Steps:

  • In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
  • In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • While dough is rising, melt 3/4 cup butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 9x13 inch baking pan. Sprinkle bottom of pan with 1/2 cup pecans; set aside. Melt remaining butter; set aside. Combine remaining 3/4 cup brown sugar, 1/2 cup pecans, and cinnamon; set aside.
  • Turn dough out onto a lightly floured surface, roll into an 18x14 inch rectangle. Brush with 2 tablespoons melted butter, leaving 1/2 inch border uncovered; sprinkle with brown sugar cinnamon mixture. Starting at long side, tightly roll up, pinching seam to seal. Brush with remaining 2 tablespoons butter. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter. Scrape remaining filling from the pan onto the rolls.

MOM'S 100% WHOLE GRAIN AIR BUNS (ROLLS) (KNEAD DOUGH IN THE ABM)

I submitted Mom's 100% Whole Wheat Air Buns (#168802) recently, but I have done some tweaking of that recipe, (which does not contain egg or milk), and I like this one better. Unlike many whole grain breads, these rolls are delicious, soft, and light. This is a reincarnation of Mom's Air Buns #168628, which uses white flour, and is a winner in the taste and texture department, but this one is much healthier because of the added protein and fibre.

Mom's 100% Whole Grain Air Buns (Rolls) (Knead Dough in the Abm) image

Steps:

  • Put egg in a 2 cup measure, whisk, and add enough warm water to come up to the 1 1/2 cup line.
  • Put this water/egg mixture, oil, honey, salt, vinegar, oats and seeds, in the bucket of the bread machine.
  • Sprinkle the powdered milk on top.
  • In the bottom of a one cup measure, put 2 tablespoons of gluten, and then fill the cup with whole wheat bread flour.
  • Put that, and another 3 cups of flour on top of the liquids.
  • Add yeast to surface, and programme for "dough" cycle.
  • You may need to add an additional tablespoon or two of water to give a smooth slightly sticky dough when the machine begins to knead.
  • I make either 2 9" round cake pans of rolls, each with 8 rolls per pan, or one pan of rolls, and form the other half of the dough into a rounded loaf, and let both rise till double (the rolls will fill the pans).
  • Bake at 350°F for 20 minutes for the rolls, and approximately 25 minutes for the loaf. The rolls will be deeply golden brown, and oh so yummy!
