CINNAMON SCONES

Buttery cinnamon scones, perfect for and lunch time snack with a nice cuppa!!

Cinnamon scones image

Steps:

  • Pre-heat oven to 230c. Sift flour and salt into large bowl, with cinnamon.
  • Rub butter in, until it resembles fine breadcrumbs.
  • Add sugar, then add milk all at once. Mix to a soft but not sticky dough with knife.
  • Turn out onto floured surface or board, knead quickly until smooth.
  • Roll out to any thickness you want, cut into 8 rounds. Transfer to buttered baking tray.
  • Brush tops with milk and sugar if liked. Bake at 230c for 7-10 min until well risen and gold.
  • Serve with fresh whipped cream and jam. :)

8oz self raising flour
1/2 level tsp salt
2oz butter
1oz caster sugar
125ml 1/4 pint milk
1 level tsp cinnamon
extra milk for brushing

Steps:

  • 1. Preheat oven to 400 degrees. Line a large baking sheet with a Silpat. 2. In a large bowl, combine flour, baking powder, baking soda and salt. Cut in butter until mixture is crumbly. I use my hand for this, it's a lot easier! 3. In a separate bowl, mix egg yolk, honey and buttermilk. Add to the dry ingredients and stir until just combined. 4. Form dough into a ball on your Silpat lined baking sheet. Pat the ball out to half an inch in thickness and eight inches in diameter. Using a pizza cutter, cut into eight pieces. 5. Whisk the egg white until froth forms and brush over the tops of scones. Mix the sugar and cinnamon together and sprinkle on top. 6. Bake at 400 degrees for 10 to 12 minutes. 7. (Optional - Mix together powdered sugar, milk and vanilla until glaze forms. Drizzle over scones.)

2 C all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 C unsalted butter, cold
1 egg, separating the egg white and yolk
3 tbsp honey
1/2 C buttermilk
Topping:
2 tbsp granulated sugar
1/2 tsp ground cinnamon
Glaze (optional):
1 C powdered sugar, sifted
1-3 tsp milk
1/2 tsp vanilla

Steps:

  • Mix flour, baking powder and cinnamon in a medium sized mixing bowl.
  • Add room temperature butter and work it in with your hands until mixture is crumbly.
  • Add honey, milk and egg. Mix only until combined.
  • Drop evenly spaced heaping spoonfuls onto a cookie sheet lined with aluminum foil.
  • Bake at 450 degrees F for 15 minutes or until golden brown.

  • Sift all-purpose flour, cake flour, baking powder, baking soda, and granulated sugar into the bowl of a stand mixer (or use a large bowl if using a hand mixer). Mix with a paddle attachment on the lowest speed until combined.
  • Once firm, remove from the fridge and cut into rectangles (there should be a total of 12 scones). Place the scones on a sheet pan with space between each of them. Cover the sheet pan with plastic wrap and freeze the dough until solid. If you are not going to bake all of the scones, remove the scones from the baking sheet as soon as they are frozen solid. Wrap them in plastic wrap and put them in a freezer safe container. The scones can remain in the freezer for up to 1 month.
  • While the scones are baking, make the glaze. Stir the butter and honey together in a small saucepan over medium-low heat until the butter and honey combine. Remove from the heat and set aside.

  • For the cinnamon honey cubes: Place flour in a medium bowl. Sift in the sugar and cinnamon and whisk to combine. Toss in the butter cubes, coating them in the dry mixture. Using your fingertips, break up the butter until there are no large visible pieces. Using a spatula, mix in the honey to form a smooth paste.
  • Press the paste into a 4-inch square on a sheet of plastic wrap. Wrap tightly and freeze until solid, about 2 hours. (The paste can be frozen up to 1 week.)
  • For the scones: Place the all purpose flour in the bowl of a stand mixer and sift in the cake flour, baking powder, baking soda, and granulated sugar. Fit the mixer with the paddle attachment and mix on the lowest setting for about 15 seconds to combine. Stop the mixer, add the butter, and on the lowest setting pulse to begin incorporating the butter. Increase the speed to low and mix for about 3 minutes to break up the butter and incorporate it into the dry mixture. If any large pieces of butter remain, stop the mixer, break them up by and, and mix just until incorporated.
  • With the mixer running, slowly pour in the cream. Add the creme fraiche and mix for about 30 seconds until all the dry ingredients are moistened and the dough comes together around the paddle. Scrape down the sides and bottom of the bowl and the paddle and pulse again to combine.
