CHAI SNOWBALLS
While these powdery treats may resemble Mexican wedding cookies or Russian tea cakes, they have a decidedly different flavor, thanks to the chai-inspired combination of Darjeeling tea and warming spices in the batter.

Steps:
- Preheat oven to 325 degrees, with racks in upper and lower thirds. In a bowl, whisk together both flours, tea, salt, pepper, and spices. In another bowl, beat butter with sugar on medium speed until light and fluffy, about 3 minutes. Beat in vanilla. Reduce speed to low; gradually add flour mixture, beating just until a dough forms. Roll level tablespoons of dough into balls. Place 1 inch apart on 2 parchment-lined baking sheets.
- Bake, rotating rack positions once halfway through, until cookies are set and golden on bottoms, 15 to 18 minutes.
- Let cool on sheets 5 minutes. Roll in confectioners' sugar; let cool completely on a wire rack. Generously coat in more confectioners' sugar before serving, or store in an airtight container at room temperature up to 2 weeks.
SNOWBALLS
Steps:
- Preheat oven to 325 degrees F (165 degrees C.) Lightly butter 2 baking sheets, or line with parchment paper.
- Cream the butter, sugar, and vanilla until light and fluffy. Sift together the flour and salt; mix into the butter mixture. Stir in the pecans. Dust your hands with a little of the confectioners' sugar and roll the dough into 1 inch balls.
- Place 2 inches apart on the baking sheets and bake for 25 minutes or just until brown. Put on racks to cool for 15 minutes, then roll in the confectioners sugar.

- Preheat oven to 375°. Cream butter and 1/2 cup confectioners' sugar until light and fluffy. Beat in extract. In another bowl, whisk flour, salt and cinnamon; gradually beat into creamed mixture. Pulse nuts in a food processor until finely ground. Mix nuts into dough., Shape into 1-in. balls. Place 1 in. apart on parchment-lined baking sheets. Bake until golden brown, 8-10 minutes. Cool on pans 10 minutes., Place remaining confectioners' sugar in a small bowl. Roll slightly cooled cookies in sugar; return cookies to wire racks to cool completely. Roll cookies in sugar again just before serving.

CINNAMON SNOWBALLS
I have been making these cookies for years. I don't remember where I got the recipe from originally but it's a Christmas cookie tray staple in our house. It's my son's favorite and he has been known to eat the whole batch at one sitting!

Steps:
- Heat oven to 300º.
- Beat butter until creamy.
- Sift together 3/4 cup confectioner's sugar, flour, salt, cinnamon and nutmeg.
- Gradually add to butter. Blend well.
- Stir in oats. Blend in vanilla and nuts.
- Mix well about 5 minutes.
- Shape to form small balls.
- Place on ungreased cookie sheets. Bake 25 minutes. Remove from sheets.
- While hot sprinkle with 1/2 remaining sugar. Cool and sprinkle again.
