CLAIRE'S PEPPERONI PIE
This is another one of my favorite recipes from the "North End Italian Cookbook". Quick, easy, delicious and versatile. I serve it as a main dish with a salad. It can be served also as an appetizer or as a brunch or lunch dish. You can dress it up with chopped fresh herbs such as oregano, parsley or basil.

- Cook pasta according to package directions. I recommend cooking the pasta a minute less than the directions. Drain and set aside for a few minutes.
- To prepare roux, melt butter into a medium saucepan over medium heat. Once melted whisk in flour, salt and pepper. Stir and cook for 3-4 minutes until color of roux gets slightly darker. Slowly whisk in milk, stirring continuously until thickened, about 2 minutes. Reduce heat to a simmer and stir in cheese until melted.
- Transfer cooked pasta to large dutch oven or pot over low heat. Pour cheese sauce over top, stirring to combine. This is a thick and creamy sauce. To thin the sauce, add a few tablespoons of milk at a time until at desired consistency.

- Heat oil in large 5 quart dutch oven over medium heat. Add onions and bell pepper, cooking and stirring for 5 minutes or until softened. Add garlic and cook for 1 minute. Stir in pepperoni and olives. In a separate large dutch oven or pot melt butter over medium heat. Whisk in flour, salt pepper and garlic salt until thick. Slowly whisk in milk. Increase heat to medium high stirring until nice and thick. Once sauce is thickened, reduce heat to low. Stir in 3 cups of cheese then stir in cooked pasta and pepperoni mixture. Add splashes of milk to thin out cheese sauce to your liking. I added about 1/2 cup. Transfer half of the mac and cheese to prepared baking dish and top with remaining marinara sauce. Top with remaining mac and cheese then remaining 1 cup cheese. Bake for 25-30 minutes until cheese is melted and bubbly. Remove from oven and serve.

- Melt the butter in a large saucepan over medium-low heat, then add in the flour. Mix it in completely.
- Take your milk and mix it into the butter/flour combination slowly, a little bit at a time. The secret to a roux is to add the milk slowly, stirring constantly to ensure that there are no lumps/ Keep adding the milk slowly until it's all incorporated.
