Steps:

  • Sprinkle steaks with 1/2 teaspoon salt and 1/4 teaspoon pepper. In a large skillet, brown steaks in 1 tablespoon oil for 2-3 minutes on each side. Remove from skillet and refrigerate until chilled., In the same skillet, saute mushrooms and onion in remaining oil until tender. Stir in remaining salt and pepper; cool to room temperature., Preheat oven to 425°. On a lightly floured surface, roll each puff pastry sheet into a 14x9-1/2-in. rectangle. Cut into two 7-in. squares (use scraps to make decorative cutouts if desired). Place a steak in the center of each square; top with mushroom mixture. Lightly brush pastry edges with water. Bring opposite corners of pastry over steak; pinch seams to seal tightly., Place in a greased 15x10x1-in. baking pan. Cut four small slits in top of pastry. Arrange cutouts over top if desired. Brush with egg., Bake 25-30 minutes or until pastry is golden brown and meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).

Steps:

  • Place mushrooms in the bowl of a food processor. Blend to a very fine consistency.
  • Heat a frying pan over medium heat. Add mushrooms and 1 pinch salt and pepper. Cook until moisture evaporates and mixture thickens, about 5 minutes. Transfer to a plate.
  • Lightly season strip steak with salt and pepper. Heat a frying pan over high heat and add olive oil. Sear strip lightly on all sides to seal in juices, 5 to 7 minutes total, making sure not to overcook. Remove and baste with English mustard.
  • Lay out a large piece of plastic wrap and place prosciutto on top in 2 rows of 4, overlapping them. Spread mushrooms evenly on top. Place steak in the center and roll prosciutto tightly around it. Wrap tightly in plastic wrap, twisting the ends. Chill in the refrigerator for 20 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Roll out pastry sheet; unwrap steak and place in the center. Mix egg and water in a bowl to make egg wash. Apply egg wash to the edges of the pastry using a pastry brush. Fold pastry tightly around steak. Chill for 5 minutes.
  • Brush egg wash over the pastry and sprinkle sea salt on top. Place on the prepared baking sheet.
  • Bake in the preheated oven until pastry turns golden, 25 to 30 minutes. Remove and let stand for 5 minutes before slicing into 1-inch pieces.

Add wine; cook 2 to 3 minutes until all liquid is evaporated. Stir in mustard, thyme, remaining 1/4 teaspoon pepper. Cook 2 to 3 minutes. Remove from skillet to medium bowl; cool.
  • Line rimmed baking sheet with aluminum foil and place in oven. Unfold pastry dough on lightly floured cutting board. Roll pastry out to 12 by 9-inch rectangle; lay dough with shortest edge toward you. Spread mushroom mixture onto pastry dough, leaving 1/2-inch border around edge of dough. Place roast in center of mushrooms. Fold pastry dough neatly around roast, stretching dough if necessary. Cut off excess pastry dough; press to seal overlapping edges. Remove baking sheet from oven and dust lightly with flour. Place pastry-wrapped roast, seam-side down, on baking sheet. Cut 4 (2-inch) vents in top of pastry.
  • Bake in 425°F oven 35 to 50 minutes or until golden brown and instant-read thermometer inserted into center of roast registers 135°F for medium rare; 150°F for medium. Transfer Beef Wellington to carving board. Let stand 10 minutes. (Temperature will continue to rise about 10°F to reach 145°F for medium rare; 160°F for medium.) Carve into slices and serve with your favorite vegetables.

  • Heat the oil and butter in the pan, then add the mushrooms. Fry over a medium heat for 5 minutes until soft and starting to colour, then add the thyme, garlic, vinegar and wine. Bubble for 5-10 minutes until the liquid has mostly evaporated. Take off the heat, stir in the crème fraîche, mustard and seasoning. Cool.
  • Heat the oven to 200°C/180°C fan/ gas 6. Overlap 6-7 parma ham slices on a chopping board to make a rectangle longer than the beef fillet. Spread half the mushroom filling over the ham. Put the fillet on top, then cover the fillet ends with 2 more ham slices. Wrap the parma ham around the fillet – it will stick to it – then spread the rest of the filling over the top half. Layer the rest of the parma ham evenly over the mushroom-coated beef so it’s fully, neatly encased. Season, wrap in cling film, then chill.
  • Unroll a pastry sheet and cut into a rectangle 2-3cm longer and wider than the beef fillet (reserve the trimmings). Prick all over with a fork, put on a baking paper-lined baking sheet and cover with another baking sheet to stop it puffing up. Bake for 15-20 minutes until golden and crisp, then remove the top sheet.

  • Generously season the beef filet with salt and pepper on all sides. Heat a tablespoon of olive oil in a large pan on high heat Sear the filet on all sides until well browned. Allow the fillet to cool. Once cooled, brush all sides with Coleman’s yellow mustard and set aside.
  • Then, make the mushroom duxelles. Puree the mushrooms in a food processor. Then cook the mixture in a sauté pan, allowing all moisture to be released. Once all of the moisture has boiled off, set the pan aside to cool.
  • Next, roll out a large piece of plastic wrap. Lay out the slices of prosciutto and spread the mushroom duxelles on top. Place the beef fillet in the middle, rolling the mushroom and prosciutto over the fillet. Use the plastic wrap to roll into a tight barrel shape and refrigerate for 20 minutes.
  • Meanwhile, preheat the oven to 400F. While the oven is preheating, lightly flour your surface and roll out a sheet of puff pastry to a size that will wrap around the fillet. Unwrap the filet from the plastic and place in the middle of the puff pastry. Brush the edges of the pastry with the beaten egg yolks. Fold the pastry around the fillet, cutting off any excess pastry. Brush with beaten egg yolks and chill for 10 minutes. Place the fillet on a baking pan, brush again with beaten eggs. Score the top of the pastry without going all the way through and sprinkle with coarse sea salt. Bake at 400F for 25-35 minutes or until medium rare. Allow to rest for 10 minute before slicing and serving.
