Classic Nicoise Salad image

Steps:

  • In a medium bowl, whisk together olive oil, lemon juice, mustard, shallot, anchovy paste, and capers. Set aside.
  • Prepare an ice-water bath in a large bowl, and set aside. Place quail eggs in a medium saucepan, and cover with several inches of cold water. Place the pan, covered, over high heat, stirring occasionally, until just before the water comes to a boil. Uncover, reduce to a simmer, and cook for 2 minutes, stirring eggs gently several times to ensure even cooking. Immediately transfer the eggs, with a slotted spoon, to the ice-water bath. Let cool completely, about 5 minutes. Pat one egg dry at a time; peel, and halve. Set aside.
  • Fill a medium saucepan with salted water, and bring to a boil. Cook haricots verts until tender, 2 to 3 minutes. Using a slotted spoon, immediately transfer beans to the ice-water bath. Drain well, and pat dry. Drizzle with rice-wine vinegar, and set aside.
  • Heat a well-seasoned grill pan over high heat. Meanwhile, place potatoes in a medium-size pot. Cover with cold, salted water. Bring to a boil, then reduce heat to simmer. Cook until fork-tender, about 8 minutes. Using a slotted spoon, immediately transfer potatoes to the ice-water bath. Drain well, and pat dry. Cut in half lengthwise, drizzle with vermouth, and reserve.
  • Lightly brush tuna with olive oil, and season with salt and pepper. Place on grill pan, and cook to rare, 1 or 2 minutes per side.
  • Toss lettuces with some of the anchovy-caper dressing, and place on large serving platter. In a separate bowl, toss potatoes, haricots verts, and tomatoes with more dressing, and arrange over lettuce.
  • Slice tuna very thinly on the diagonal, and arrange over salad. Drizzle tuna with dressing. Garnish salad with quail eggs and nicoise olives.

2 tablespoons Dijon mustard
1 shallot, finely chopped
2 teaspoons anchovy paste

1/2 pound haricots verts, stem ends trimmed
2 teaspoons rice-wine vinegar
8 baby red or fingerling potatoes
2 teaspoons dry vermouth
1 1/2 pounds tuna steak, 1/2 inch thick
Coarse salt and freshly ground pepper
1 head red-leaf lettuce
1 head, Boston lettuce
1/2 pint red cherry tomatoes
1/2 pint yellow cherry tomatoes
1/2 cup nicoise olives

Classic Tuna Nicoise Salad image

Steps:

  • Bring 2 medium pots of salted water to a boil. Add the potatoes to 1 pot and blanch until tender, about 5 to 6 minutes. Drain in a colander, pat dry, and set aside. Add the green beans to the other pot and blanch until tender, 4 to 5 minutes. Drain in a colander, pat dry, and set aside.
  • Arrange the tuna on a cutting board and cut into 4 equal portions. Season the tuna steaks with 1/4 teaspoon salt and 1/4 teaspoon pepper, each. Heat the oil in a large skillet (or 2 medium skillets), over medium-high heat. When the oil is hot but not smoking, add the rosemary sprigs and tuna steaks and sear, about 30 seconds per side for medium-rare. Remove from the pan and dice the tuna into 1-inch pieces.
  • Tear the lettuce into bite-size pieces and combine with chopped fresh parsley and tarragon. Toss with enough of the Anchovy Dressing just to coat. Adjust seasonings with salt and pepper as needed. Toss the potatoes and green beans in 1/4 cup of the Anchovy Dressing. Arrange the lettuce along the side of 4 large plates (or 1 serving platter). Spoon the vegetables along the other side of the plate. Arrange the diced tuna over the lettuce. Arrange the tomatoes, olives, sliced red onions, and eggs on the other sides of the plates (or serving platter). Garnish with additional herbs if desired and serve immediately.
  • In a medium bowl, mash the anchovy, salt, pepper, and garlic into a paste with the back of a fork. Add the egg and whisk well to blend. Add the lemon juice and mustard, and whisk well. Add the oils in a steady stream, whisking constantly to form a thick emulsion. Add the shallots, capers and Worcestershire, whisk well, and adjust the seasoning, to taste. Cover and refrigerate until ready to use.

1/2 pound red potatoes, scrubbed and cut lengthwise into 1/4-inch thick slices
1/4 pound haricots verts, or small, thin green beans, ends trimmed
2 pounds yellowfin tuna loin, trimmed of sinew
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons olive oil
2 rosemary sprigs
1 large head romaine or Bibb lettuce, rinsed and patted dry
2 teaspoons chopped fresh parsley leaves
1/2 teaspoon chopped fresh tarragon leaves
Anchovy Dressing, recipe follows
1/2 pound Roma plum tomatoes, cut into 1-inch cubes
1/3 cup halved and seeded black brine-cured olives
1/3 cup halved and seeded green brine-cured olives
1/2 cup thinly sliced red onion
4 hard-boiled eggs, peeled and sliced
1 anchovy fillet, drained
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped garlic
1 large egg*
2 teaspoons fresh lemon juice
1/2 teaspoon Dijon mustard
6 tablespoons olive oil
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons minced shallots
2 teaspoons capers, drained and chopped
1/2 teaspoon Worcestershire sauce

Steps:

  • 1. Steam your potatoes & roast the asparagus at 350 degrees for 15 minutes while cleaning & slicing up the rest of your vegetables. Once you have your onion, cucumbers and radishes sliced add them to a bowl of the dressing and let them soak for 10 or 15 minutes.
  • 2. Arrange your romaine lettuce on a tray, large plate or a serving cutting board as I did. Then, start arranging your vegetables, canned tuna on top of the lettuce. Make it as eye appealing as possible. Make sure to add the cucumbers, onions and radishes. Afterwards, take a few tablespoons of the Muffuletta olive mix and add to the top of the salad. I love the flavors of the olives! Leave the dressing out and let others add on their own the lemon tarragon or their favorite dressing. (I used what would fit onto my cutting board.....so amounts of vegetables may vary.)
  • 3. Here is the Muffuletta olive salad mix that I used.

2 small cucumbers, julienned
4 - 6 large eggs, hard boiled & quartered
1 medium purple onion, sliced
1 - 1 1/2 c beets, pickled
2 can(s) tuna, albacore
1 bunch aspargus, roasted
12 small fingerling potates, steamed
1 c olives, black
1 c radishes, sliced
1 bunch romaine, chopped (or your favorite greens)
1 bottle lemon tarragon dressing
1 jar(s) muffuletta olive salad mix
fresh cracked pepper & salt
GREAT ADDITIONS
1 large loaf of rustic bread, baked, sliced and fresh butter
