GOURMET SWEET POTATO CLASSIC
Once you taste this, you won't ever go back to the marshmallow-topped variety! I have peeled and cooked in the microwave, and also boiled the sweet potatoes. They taste the same no matter how you cook them. So, use the technique that works best for you!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Bake sweet potatoes 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash.
- In a large bowl, mix the mashed sweet potatoes, salt, 1/4 cup butter, eggs, vanilla extract, cinnamon, sugar, and heavy cream. Transfer to the prepared baking dish.
- In a medium bowl, combine 1/4 cup butter, flour, brown sugar, and chopped pecans. Mix with a pastry blender or your fingers to the consistency of course meal. Sprinkle over the sweet potato mixture.
- Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned.

- Scrub sweet potatoes, but do not peel. Place potatoes in 3-quart saucepan. Add enough water just to cover. Heat to boiling; reduce heat to low. Cover and simmer 20 to 25 minutes or until tender. Drain; cool slightly. Slip off skins. Cut into 1/2-inch slices.
- Heat remaining ingredients in 10-inch skillet over medium heat, stirring constantly, until smooth and bubbly. Add potatoes. Gently stir until glazed and hot.

This is the classic sweet potato recipe that my grandmother serves each year for Thanksgiving and Christmas. It's very simple, yet each time I make it people rave and ask for the recipe. Embarrassingly simple & quite delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- Place whole sweet potatoes in a steamer over a couple of inches of boiling water, and cover. Cook until tender, about 30 minutes. Drain and cool.
- Peel, and slice sweet potatoes lengthwise into 1/2 inch slices. Place in a 9x13 inch baking dish.
- In a small saucepan over medium heat, melt butter, brown sugar, water and salt. When the sauce is bubbly and sugar is dissolved, pour over potatoes.
- Bake in preheated oven for 1 hour, occasionally basting the sweet potatoes with the brown sugar sauce.

I don't know why some people are afraid to try sweet potato pie even though they love pumpkin pie. If anyone is unsure about whether they should try it I encourage them by asking, "Which do you like better--squash or mashed potatoes?" Works every time. It has nearly the same flavor as a pumpkin pie.

Steps:
- Pierce sweet potatoes and microwave for 8 to 10 minutes or until the potatoes are tender.
- (Or you can bake them in 375°F oven for approximately 45 minutes.) Cool.
- Partially bake pastry shell in a 450°F oven for 5 minutes.
- Cool slightly on a wire rack.
- Reduce oven temperature to 375°F Peel sweet potatoes.
- Place all pie ingredients in food processor and process until smooth.
- Pour 3/4 of mixture into pastry shell.
- Cover edges of pastry with foil strip to keep it from browning too much.
- Place on oven rack and then spoon in remaining sweet potato mixture.
- Bake at 375°F for 25 minutes.
- Remove foil from edges and bake another 20 to 25 minutes more until knife inserted near center comes out clean.
- Cool on wire rack.
- Cover and chill in refrigerator.
- Serve with whipped cream.

- In a small bowl, combine pie crust mix and pecans. Gradually add water, tossing with a fork until dough forms a ball. Roll out to fit a 9-in. deep-dish pie plate or cast-iron skillet. Transfer crust to pie plate. Flute edges; set aside., In a food processor, combine the eggs, sweet potatoes, milk, pumpkin pie spice, vanilla and salt; blend until smooth.
