In my search for a good cream pea recipe, I found many, but none that quite matched what I wanted. So I took to my own creativity and came up with this absolutely fabulous recipe. We love it so much we have this on the side quite often.

- In a medium saucepan, combine peas, water, and salt. Bring to a boil, then stir in butter.
- In a small bowl, whisk together cream, flour, and sugar. Stir mixture into peas. Cook over medium-high heat until thick and bubbly, about 5 minutes.

Steps:
- Bring water, peas, and salt to a boil in a saucepan; cook until peas are just tender, about 2 minutes. Drain and return peas to saucepan. Reduce heat to medium and stir in flour. Add butter and enough milk to barely cover peas. Cook and stir until thickened, 5 to 10 minutes.

- Melt butter in a saucepan over medium heat. Stir flour, sugar, and pepper into the melted butter until smooth.
- Remove saucepan from heat. Stir peas and milk into the butter mixture. Return saucepan to medium heat; bring to a boil while stirring regularly. Reduce heat and cook at a simmer until the sauce thickens, about 10 minutes.

- In a medium saucepan, over medium heat, add butter. When it's melted and starts sizzling, add shallots and quickly sauté them for 1 minute or until soft.
- Add pressed garlic and sauté for only 30 seconds. Add flour and whisk continuously for 2 minutes to remove the raw taste from it - this will also help to thicken the sauce.
- Slowly pour in half-and-half and continue whisking for a couple of minutes as well or until the mixture is fairly smooth. Pour in the chicken broth and keep whisking.
- As the sauce starts to thicken slowly, add sugar, fresh chopped thyme, sea salt and white pepper. Continue whisking for another minute or so or until the sauce has a beautiful consistency without turning into a thick gravy.
- Add the peas and stir until everything is well blended, reduce the heat to medium low and medium, and cook for 5 minutes, enough to warm up the peas. When the time is up, taste and adjust if necessary and serve immediately.

- In a medium saucepan over medium heat, add milk, coffee beans, sugar and salt. Stir and bring the mixture to a simmer - do not boil.
- Remove from the heat and transfer the milk mixture to a small bowl. Add finely ground coffee, Tia Maria and vanilla extract; stir well. Place wax paper on top making sure it touches the surface to prevent a skin from forming and let the mixture steep for 1 hour.
- Later, remove wax paper and discard it. Pour mixture into a fine sieve over a large bowl; discard coffee beans. Add sweetened condensed milk and stir to blend. Taste the custard and add powdered sugar if it's bitter - keep in mind that the whipped cream has some sweetness to it; set aside.
- In the bowl of a stand mixer, add cold heavy cream and powdered sugar. With the whisk attachment on, process on high speed until stiff peaks form.
- Scoop half the whipped cream into the milk mixture and fold until mixed. Add the custard mixture to the remaining whipped cream and fold again until well combined.
- Pour the mixture into an ice cream tub, cover and transfer to the freezer until it hardens, about 8 hours.

- When it is almost like a paste add the milk and stir.
- Continue stirring on low heat until the mixture thickens.

- In a medium bowl, combine sweetened condensed milk, cocoa powder, vanilla and salt; stir and set aside.
- In the bowl of a stand mixer, add heavy cream and process until stiff peaks form.
- Fold a third of the whipped cream into the milk-chocolate mixture then add it to the remaining heavy cream, folding gently. Add dark and white chocolate pieces including any dust or slivers left on the cutting board; gently fold inches.
- Pour the mixture into a 2 quart ice cream tub, cover and transfer to the freezer for at least 12 to 24 hours or until frozen.
