BANANA COCONUT CREAM PIE

I created this pie as I had some ripe bananas left which I thought would be great in this recipe. To top it off I used my Coconut Whipped Cream recipe #219030. I also had a little of the puff pastry left, so I decorated the top of the pie with some little maple leafs.

Steps:

  • Open the puff pastry and remove one of the sheets and let it thaw at room temperature for about 40 minutes.
  • Spread your unsweetened flaked coconut on a baking sheet and toast at 350'F for 5-10 minutes. Keep an eye on this as it will brown very fast. Remove as soon as the ends of the coconut become golden. Let cool.
  • For The Pudding:.
  • Prepare the pudding according to the package directions "except" only use one cup of non- dairy milk. This will make the pudding thicker. Once the pudding boils add 1 cup of coconut whipped cream.
  • Give it a good whisk to incorporate.
  • Take it off the heat and add the vegan gelatin and whisk again to break up the gelatin. Whisk for a few minutes until the mixture is smooth. Put a lid on it and set aside for now.
  • Preheat oven to 400'F.
  • To prepare the puff pastry crust:.
  • After the puff pastry has thawed out roll it out to fit into a 9" pie dish. If any holes develop, use water to glue the pastry back together.
  • Place the rolled out pastry into the pie pan and make sure you get all the air bubbles out from underneath. Prick with a fork.
  • Place it into the preheated oven for 15 minutes. I re-pricked the pastry about 7 minutes into the cooking as it did puff up more.
  • Once the puff pastry is golden remove from the oven and put it on a metal rack to cool slightly.
  • Place enough of the sliced banana onto the puff pastry crust to cover the bottom (and sides if you wish).
  • Give the pudding another whisk and then pour it on top of the sliced bananas. Spread it evenly then top with more banana slices.
  • Then spread the remaining two cups of coconut whipped cream on top of the banana slices. Spread it out evenly.
  • Sprinkle the toasted coconut over the coconut whipped cream Put it into the fridge and let it chill for at least 3-4 hours.
  • Bon Appetit!

Steps:

  • Prepare and bake 9-inch pie shell; set aside to cool. In a medium saucepan, add milk and vanilla. If you are using a vanilla bean, scrape well and add to pot, along with empty bean (you will remove this later). In a large saucepan, combine the sugar, flour and salt; If you used a vanilla bean, you may now remove it. Gradually stir in the scalded milk, whisking constantly. Cook until thickened over medium heat, stirring constantly. Cooking times will vary, depending on your stove top. Once mixture thickens, reduce heat to medium-low and cook for another 2 to 3 minutes, stirring occasionally. Meanwhile, separate your eggs. In a small bowl, lightly beat the 3 egg yolks; DO NOT ADD to the saucepan yet, you will need to temper the egg yolks first! To do so, add the hot mixture a little at a time, stirring continuously (start out by adding a tablespoon at a time) and once you have added enough of the mixture to slowly bring the temperature of your egg yolks up, you may add the yolks to the saucepan. Continue to cook for one minute longer, stirring constantly. Your mixture should look about the same thickness as this, and should be able to easily coat the back of a spoon without dripping off. Remove saucepan from heat and blend in the butter. Set aside and allow to cool until lukewarm; your mixture will continue to thicken as it cools. When custard is cooled: slice bananas and layer in pie shell. Pour custard over bananas. Refrigerate for 2 to 3 hours, or until custard is set. Top as desired. * Whole milk is recommended; if you are using anything less (1-2%) I suggest substituting a portion of it with heavy cream to obtain the necessary consistency for the custard.

1 (9-inch) homemade deep dish pie crust, baked (you may substitute for a store-bought shell)
1 vanilla bean, scraped (or 1 teaspoon pure vanilla extract)
3 cups whole milk*
1/2 cup white sugar
1/3 cup plus 1 tablespoon all-purpose flour
1/4 teaspoon salt
3 egg yolks, slightly beaten
1 1/2 tablespoons butter
3 to 4 ripe bananas
Optional toppings: sliced almonds, homemade whipped cream, meringue

COCONUT/BANANA CREAM PIE

After tasting it at a bake sale, I got the recipe for this pie from a friend, then adapted it. I make it for family gatherings-it's everyone's favorite treat-and also for when company comes by. Our children-6 and 3-"help" me with baking. They've learned many of their measurement in the kitchen!

Steps:

  • Melt butter in heavy large skillet over medium heat. Add sugar, 1 tablespoon rum, water and cinnamon and stir until syrupy. Add bananas and cook 2 minutes, turning occasionally and basting with syrup. Using slotted spoon, transfer bananas to plate. Boil syrup until reduced to 2 tablespoons, about 2 minutes. Pour syrup over bananas; let cool.
  • Combine chocolate, cream and corn syrup in heavy small saucepan; stir over low heat until chocolate melts and mixture is smooth. Remove from heat. Transfer 2 tablespoons chocolate mixture to small bowl (Mixture will be thick). Add 2 tablespoons rum to mixture in saucepan; stir sauce to blend.
  • Position rack in center of oven; preheat to 400°F. Place 1 pastry sheet on floured work surface. Set 9-inch-diameter tart pan upside down on pastry. Using knife, cut pastry into 9-inch-diameter scalloped round. Repeat with remaining pastry sheet. Place 1 pastry round on ungreased heavy large baking sheet; arrange 3 whole bananas on pastry, forming circle and leaving 1/2-inch pastry border.
