BUDDY'S FISH HASH

This is a 75-year-old family recipe. Buddy is now in his late 70s and can vividly remember his father making this for him as a child. (His dad died when he was 7.) His dad worked with the Coast Guard Station in Virginia Beach and this meal was a staple for the station crew as well as his family.

Buddy's Fish Hash image

Steps:

  • Steam or boil the fish 7 to 8 minutes. Remove the fish and let cool 3 minutes, then very carefully peel and discard the skin. Slowly remove the meat from the bones using a fork or small knife (take your time with this as the more you pay attention, the fewer small bones you will find in your finished meal).
  • Chop the baked potato into bite-size chunks and add the fish to the potatoes. Top with the bacon and onions, then add vinegar and pepper, to taste. Mix all the ingredients together to a hash, using a fork, and enjoy!

3 large fresh whole spot fish, cleaned
1 large Yukon gold baking potato, peeled and boiled
1/4 cup chopped freshly cooked bacon
1/4 cup finely chopped yellow onion
Cider vinegar
Freshly ground black pepper

  • Put the eggs in cold water and bring to a boil.
  • After they reach a boil, turn off the heat and let them cook for 20 minutes.
  • After 20 minutes, replace the hot water with cold to stop cooking.
  • Bring a large pot of salted water to a boil.
  • Once boiling, add cod and cook until just flaky, about 15 minutes.
  • Once the cod is cooked, remove hot water and cover in cold water to stop cooking.
  • Sautee diced garlic and onions butter until fragrant.
  • Add vegetables (except capers and parsley) and potatoes.
  • And cook until just tender, about 15 minutes.
  • Mix cooked ingredients.
  • Garnish with chopped parsley and capers and eggs sliced in half.

1 pound skinless cod
1 pound potatoes
1 ounce red onion
1 cup corn kernels
1 cup green peas
1 cup red bell pepper
1/2 cup butter
1/2 cup capers
5 clove Garlic
4 piece large eggs
1 ounce parsley

  • Soak salt fish pieces 12 to 24 hours in a large bowl of cold water, with the fish fully submerged (draining and changing water once or twice during that time. See text above/notes below).
  • In a large pot of fresh water, boil pieces of salt cod for 15 to 20 minutes (there should be an inch or two of water above the salt cod, basically ensuring that it is fully submerged and covered by the water). Drain.Note: As you are cooking the salt cod, reduce the heat, if necessary, while still maintaining a boil.
  • Once salt fish is cool enough to handle, remove skin and all bones (and discard), shred fish with your hands (checking again for bones and discarding) and lay fish to one side in a bowl.
  • Meanwhile, boil potatoes in a pot of lightly salted water until tender (there should be an inch or two of water above the potatoes, basically ensuring that they are fully submerged and covered by the water). Drain and let cool slightly. Roughly mash potatoes in the pot.Note: As you are cooking the potatoes, reduce the heat, if necessary, while still maintaining a boil.
