CREAMY CAPPUCCINO MOUSSE

Creamy Cappuccino Mousse image

Steps:

  • In a large bowl, beat the cream cheese until smooth. Gradually beat in milk until blended. Gradually beat in coffee. Add pudding mix and cinnamon; whisk for 2 minutes. Let stand for 5 minutes or until soft-set. , Fold in 2 cups whipped topping. Spoon into six dessert dishes. Refrigerate until set. Garnish with remaining whipped topping and additional cinnamon.

  • In a chilled small glass bowl and using chilled beaters, beat cream until it begins to thicken. Add confectioners' sugar, cocoa and coffee granules; beat until soft peaks form. Store in the refrigerator.

I have not tried this recipe. I got this recipe from Linda's Low Carb. You can vary the flavor slightly by using flavored instant coffee like I did. I used a chocolate flavored coffee (Taster's Choice). If the coffee you're using is strong, you may want to adjust the amount of sweetener a little.

  • Pour the cream into a large mixing bowl. Gently stir in the instant coffee until dissolved. Gently stir in the Splenda and vanilla. Gradually whisk in the pudding mix until no longer grainy, then briskly whisk until thick. Chill well before serving.
  • Can be frozen.
