- 1. Combine sugar, cocoa, instant coffee and cinnamon in large saucepan. Gradually stir in milk; heat stirring occasionally, to serving temperature. Pour into mug or cup. Serve immediately.

Steps:
- Place cinnamon in coffeepot.
- Scrape in vanilla beans and add pod.
- Brew coffee with 10 cups water.
- Whip cream to soft peaks; add sugar and beat until stiff peaks form.
- Pour coffee into 6-ounce cups, discarding cinnamon and vanilla pod.
- Add coffee liqueur to taste. Top with whipped cream and serve.

OLD-FASHIONED COFFEE CAKE

- In a small bowl, cream butter and 1 cup sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, baking powder, and 1 teaspoon nutmeg; add to creamed mixture alternately with buttermilk. Pour into a greased 9-in. square baking pan (batter will be thick). , Combine the remaining sugar and nutmeg; sprinkle over batter. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

- Cortado. Cortado comes from the Spanish word meaning “to cut,” and this small drink uses warm milk to “cut” the bitterness and acidity of espresso. Like the café au lait, the cortado is made of equal parts coffee and milk, although it’s both smaller and stronger thanks to the short size of the espresso.
- Macchiato. This small Italian drink is designed to be consumed in the afternoon, a counterpoint to the morning cappuccino. The name roughly translates to “marked” or “stained,” which refers to the dollop of milk foam right in the center of the beverage.
