COFFEE SHOP FUDGE

This coffee fudge recipe is one that my son, Jackson, and I worked on together. After several efforts, we decided this version was a winner. It is smooth, creamy and has an irresistible crunch from pecans. The coffee and cinnamon blend nicely to provide subtle flavor. -Beth Osborne Skinner, Bristol, Tennessee

MOCHA FUDGE

This is an easy traditional fudge that is best made using a candy thermometer. It is a creamy coffee flavored fudge with a hint of chocolate and pecans swirled in. If you like fudge without nuts, simply leave them out.

Steps:

  • In a medium saucepan, stir together the instant coffee, white sugar and salt. Stir in the milk and corn syrup, and add the butter. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface. Remove from heat, and stir in vanilla. Let cool to room temperature, or about 110 degrees F (45 degrees C).
  • When the mixture is cool, beat with a wooden spoon until it loses its gloss. Add nuts and chocolate chips and stir slightly to create a marbled effect. Pour into a buttered 8 inch square baking dish. Arrange pecan halves on the top if desired. Cool completely before cutting into pieces.

COFFEE-PECAN FUDGE

This fudge is soooo good and rich. Perfect taste of chocolate and coffee. For gift giving you can pour into mini loafpans, then slice each loaf and individually wrap in cellophane wrap and tie with a large ribbon. This came from Southern Living Christmas 2004. This is an easy recipe to make and I am not sure of the actual prep time because it depends on too many things.

Steps:

  • Combine first 6 ingredients in a 4 quart heavy saucepan.
  • Cook over medium heat, stirring constantly, 10 to 15 minutes or until sugar dissolves and marshmallows melt.
  • Bring to a boil.
  • Cook, without stirring, until a candy thermometer registers 234 degrees which is the soft ball stage.
  • Remove from heat.
  • Stir in chocolate morsels until melted.
  • Stir in pecans and vanilla.
  • Spread immediately into 2 aluminum foil-lined, buttered 5 3/4" x 3 1/2" mini loafpans. I used 1 regular aluminum foil loaf pan for mine. (Lining the loafpans with aluminum foil and buttering them makes it easy to remove uncut fudge from the pans in one piece to slice it).
  • Cool completely.
  • Remove fudge from pans.
  • Slice into 1/2" slabs.
