We love the little 100 calorie packs of the Reese's Mix, but I wanted to buy it in bulk and couldn't find it in larger packages. So I went to work to put together my own mix - this is the result!

  • Store in a large ziplock bag, or an airtight container.

  • Preheat oven 250F, prepare baking sheet.
  • Place pasta in a bowl, toss with oil, basil, oregano, salt.
  • Transfer to baking sheet.
  • Bake in oven about 10 minutes, until slightly browned and crisp.

Steps:

  • Spread the refried beans (if using) and sliced cheese onto the tortilla and microwave it for 30 seconds, or until melted.
  • Put the lettuce, tomato, onion, pickles, olives (if using) and any other vegetable that you want (such as peppers) on top of the cheese.
  • Drizzle with dressings.
  • Making sure that all the filling is in the centre of the tortilla, wrap it up carefully, tucking in all edges.

  • Light grill.
  • In a food processor, pulse the cilantro with the scallions, garlic, thyme, ginger, chile, allspice and nutmeg until coarsely pureed.
  • Blend in the olive oil, tomato paste and vinegar. Season with salt and pepper.
  • Transfer 6 tablespoons of the puree to a large bowl. Add the mussels, cockles/clams and tomatoes and toss to coat.
  • Tear off four 20-inch-long sheets of extra-heavy-duty foil.
  • Mound half of the seafood in the center of each of 2 foil sheets. Add the shrimp in a layer on the seafood. Cover with 2 remaining sheets of foil; fold up the edges all around to seal.
  • Grill the hobo packs over a hot fire for about 6 minutes, or until sizzling and puffed. Using oven mitts, transfer the packs to a large rimmed platter. Open the packs carefully, pour the eseafood into shallow bowls.

REESE'S PEANUT BUTTER CUPS (COPYCAT)

This recipe is from Todd Wilbur's "Top Secret Recipes" (www.TopSecretRecipes.com). In heaven there must be a special place for those of us who love peanut butter & chocolate. This recipe has no added butter like many other copycat recipes. You will need a muffin tin, preferably with shallow cups, but the regular size will work if filled only halfway. Times are a guess-timate and do not include cooling and firming time.

Reese's Peanut Butter Cups (Copycat) image

Steps:

  • In a small bowl, mix the salt, peanut butter and powdered sugar until firm.
  • Melt the chocolate chips in a double boiler over hot, not boiling water (OR you can melt them in the microwave for about two minutes, stirring midway).
  • Grease muffin-tin cups and spoon some chocolate into each, filling halfway.
  • With the back of a spoon, draw the chocolate up the edges of each cup until all sides are coated.
  • Cool in the refrigerator until firm.
  • Spread about a teaspoon of peanut butter mixture onto the chocolate in each cup, leaving room for the final chocolate layer.
  • Pour some chocolate (I imagine you will need to re-heat it) onto the top of each candy and spread it to the edges.
  • Let sit at room temperature or covered in the refrigerator.
  • Turn out of pan when firm.

We use Quaker Corn Bran puffs in this because it has a decent amount of whole grain and fiber and tastes like a less sweet version of corn pops. 1 pack: 100 calories, 4g fat, 65mg sodium, 14g carbs, 1g fiber, 9g sugars, 2g protein = 2 points
