- Combine all ingredients, except for oil and cilatro in a large bowl and then shape mixture into 6 patties.
- Heat oil in skillet over medium heat and saute patties to desired degree of doneness (2-5 minutes per side).
- Drain on paper towels and garnish with cilatro, if desired.

Steps:
- Using a food processor and the steel knife mince parsley and set aside.
- With the food processor running drop garlic through the feed tube and mince. Add onions and chop using on/off turns. Transfer onion/garlic mixture to a large soup pot.
- Place meat in the food processor work bowl and chop using 6-8 on/off turns, then continue grinding until desired fineness is achieved. Add meat to pot and cook over medium heat for 6-8 minutes or until browned.
- Clean out work bowl of food processor and then chop tomatoes using 4 on/off turns. Add to meat mixture in pot.
- Slice potato, carrots and celery using slicing disc. Add vegetables to pot along with tomato juice, broth, barley, salt, herbs and pepper. Cook over medium heat about 1 hour.
- Discard bay leaf and stir in reserved parsley.

Steps:
- In a small bowl combine vinegar and garlic. Let stand 10 minutes.
- Pat steaks dry and then sprinkle with salt and pepper on both sides.
- Rub vinegar mixture into steaks. Let stand at room temperature for 10 minutes (or cover with plastic wrap and refrigerate for up to one hour).
- In a skillet over medium heat melt butter with oil.
- Add steaks and cook to desired doneness (5-10 minutes per side). Transfer steaks to plates and cover with foil to keep warm.
- Pour off fat from skillet.
- Put skillet on high heat and stir in wine, scraping up browned bits. Boil for 3 minutes or unti it is syrupy.
- Whisk in tomato paste. Remove from heat.
- Whisk in remaining 2 tablespoons butter (1 piece at a time), incorporating in sauce.
- Stir in prosciutto and parsley.
- Spoon sauce over steaks.
CUMIN CORIANDER BEEF PATTIES (KEBABS)
This is from an amazingly beautiful book called "Mangoes & Curry Leaves". These were so good and would definitely be fantastic in a pita with a bit of tzatziki. The recipe below is as it is in the book, but I added a bit more salt and topped off with a bit of lemon or lime juice.

- In a large bowl, mix the meat, ginger (optional), onion, cumin, coriander, cayenne, salt, yogurt and vinegar. Mix well with your hands, mashing and kneading to blend the flavors and get a smooth texture.
- Mix in the coriander leaves or mint leaves.
- With wet hands shape and firmly press the meat into eight ovals or rounds 3/4-inch thick.
- You can then grill the patties on a lightly oiled rack under medium heat, turning after 5 minute and continuing to cook until done. You can also broil them 5 to 7 inches from heating element turning them occasionally and cooking for about 8 minute or pan fry them 3 to 4 minutes on each side.

- In a large pot over high heat bring 12 cups water to a boil. Remove from heat.
- Add sugar, mint and tea bags, stirring until sugar dissolves. Steep for 1 hour. Discard tea bags and mint.
- Stir in lemonade concentrate and remaining water (4 cups).
- Pour into pitchers and chill for at least 3 hours before serving.
- Serve over ice and garnish with lemon slices and mint sprigs.
