Steps:
- 1. Mix jello and cottage cheese together. Drain can of pineapple thoroughly and mix in with jello and cottage cheese mixture. Fold in cool whip.
- 2. I have made this with orange, strawberry, peach and lime sugar free jello flavors. I'd say orange is my favorite because the orange pineapple make a nice combination.
- 3. Enjoy!!

- Preheat oven to 350 degrees.
- Grease a 9" X 9" baking dish and place cheese in the bottom.
- Whisk together eggs, milk, flour, cottage cheese, and melted butter.
- Pour mixture over cheese in baking dish and.
- sprinkle breadcrumbs on top.
- Bake 45 to 50 minutes, until eggs are done.

When my husband discovered he was diabetic, he LOVED ice cream so I had to come up with something to substitue. Even though his is no longer, I still enjoy this recipe as a salad or a dessert. Hope anyone that makes this recipe enjoys the taste also. HAPPY COOKING TO ALL.

- 1. In a decsent size wide mouthed bowl, combine the cottage cheese, sour cream and jello powder. Mix well until no white of the cheeses are visible. If you use canned fruit drain very well, fresh fruit wash and dry well. Now put the fruit into the mixture and blend well. Cover with clear wrap and refrigerate until it sets, approximately 2-3 hours. Now this can be eaten as a dessert or on a bed of lettuce. Very cool and refreshing. This is a good for someone that is diabetic.
