COWBOY BREAD
This recipe comes from the public schools in my hometown. It was a favorite both at school and home. My own kids love it too.

Steps:
- Combine shortening, flour, salt, and sugar.
- Mix until crumbly.
- Reserve 1/2 cup to sprinkle over batter.
- Combine leavening and spices and add to larger amount of crumbly mixture.
- Add eggs and buttermilk and mix well.
- Pour batter into greased 9x13 inch oblong pan.
- Sprinkle with reserved crumbly mixture and additional cinnamon.
- Bake in 375 degree oven 25-30 minutes.

Steps:
- 1. Combine first eight ingredients in a saucepan and bring to low boil while stirring continually. Reduce heat and let simmer 5 minutes. Remove to cool.
- 2. Sift together flour, baking soda, baking powder and salt.
- 3. Once cooled to lukewarm, slowly stir the liquid spice/fruit mixture into the dry ingredients. Fold in chopped pecans. Pour into two large well-greased loaf pans.
- 4. Arrange pecan halves in a decorative pattern on the top of the loaves.
- 5. Bake 1 hour at 300 degrees.
- 6. With a brush, gently apply a coat of corn syrup over the cakes. (A few tablespoons of bourbon or rum may be added to the corn syrup.)
- 7. Continue baking one hour, or until a toothpick come out of the cakes cleanly. Cool.
- 8. For an adult dessert, a few tablespoons of bourbon or rum can be poured on each slice prior to serving.
COWBOY BREAD
Similar to pita breads, this is a round fried bread which supposedly traces its origins back to the great American West.

Steps:
- In a large bowl, stir together the water, milk, and sugar. Sprinkle the yeast over the top, and let stand for 5 minutes to dissolve.
- Stir the egg and butter into the yeast mixture, then stir in the salt, nutmeg, and 2 cups of the flour. Mix until everything is well blended. Mix in remaining flour, 1/2 cup at a time until the dough pulls away from the side of the bowl. Turn out onto a floured surface, and knead for 10 minutes (no cheating!). Place dough into a greased bowl, and let rise until doubled in size.
- Divide the dough into 8 balls, and let rest for another 20 minutes. Roll each ball out to 8 to 10 inches in diameter.
- Heat a cast-iron skillet over medium-high heat. Fry each of the pieces of bread fro 30 to 60 seconds on each side, or until light to medium brown spots appear. Keep covered with a damp cloth, or store in a plastic bag until serving.

COWBOY BREAD (ITS A CAKE)
I got this recipe from a friend that was a teacher. This was a favorite with everyone when this was the dessert in the cafeteria at her school. Its just too darned good not to share.

- 1. blend flour, br. sugar salt and butter til it resembles crumbs. Reserve 1 cup crumbs for topping.
- 2. mix all the rest of ingredents into remaining flour misture until blended well
- 3. spray or greese a full cookie sheet, with sides of course. pour mixture into cookie sheet and spread the reserved crumbs over the top of mixture evenly.
- 4. bake for approx 20 minutes til done. do NOT remove from pan! eat it warm or hot. if it gets covered the crumbs doesnt stay crunchy, but still good.
COWBOY BREAD
After a long search for a cowboy bread recipe that tasted exactly like the one I used to eat in elementary school I found this one. It came from cooks.com and I absolutely loved it!

- Preheat oven to 375 degrees.
- Blend flour, sugar, salt, baking powder, soda, spices and butter. Set aside 1 cup of the mixture for crumb topping.
- Add buttermilk and eggs and blend until smooth. (Do this by hand.)
- Pour into greased 9 1/2" x 13" x 2" pan. Sprinkle with reserved crumbs.
- Bake at 375 degrees for 35 to 40 minutes. Serve warm or cooled.

- Heat oven to 400°F. Spray bottom and sides of 13x9-inch pan with cooking spray or grease with shortening. In medium bowl, mix flour, cornmeal, sugar, baking powder and 1/4 teaspoon salt. In small bowl, stir together milk, oil and egg. Add egg mixture all at once to flour mixture; stir just until moistened. Spread batter in pan. Bake 10 to 13 minutes or until light golden brown.
- Meanwhile, in 10-inch nonstick skillet, cook sausage, bell pepper and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until sausage is no longer pink; drain. Remove sausage from skillet; keep warm.
- In medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until well mixed.
- In same skillet, heat butter over medium heat just until butter begins to sizzle. Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 3 to 4 minutes or until eggs are thickened throughout but still moist.
- Arrange eggs over hot crust; top with sausage mixture. Sprinkle with cheese. Bake 5 to 7 minutes or until cheese is melted. Serve with salsa.
