CRANBERRY BRIE BITES
Tangy cranberry, creamy brie, and crunchy walnuts come together in a buttery shell for an appetizer that will wow your guests. Bonus: These can be made up to 3 days ahead; wrap them in plastic wrap before the baking step and store in the refrigerator. Serve warm or at room temperature.

Steps:
- Place Brie cheese in the freezer for 20 minutes. Oil a mini muffin pan with cooking spray.
- Roll 1 puff pastry sheet out into a 10x14-inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
- Cut chilled Brie cheese into 24 pieces approximately 3/4-inch in size. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup; press in 1 piece of Brie and top with 1 teaspoon of chopped walnuts. Sprinkle bites with sea salt. Chill for at least 30 minutes and up to 3 days.
- Preheat oven to 400 degrees F (200 degrees C).
- Bake bites in the preheated oven until golden brown, 18 to 20 minutes.

Steps:
- Preheat oven to 350°F (180°C).
- Roll out the puff pastry sheets and cut out 8-centimeter (3-in) circles for the pie base and 7-centimeter (2 ½-in) circles for the top.
- In a greased muffin tin, place the pie bases in each hole, pressing them up against the sides.
- Add the bacon, brie, and cranberry sauce, then use the egg wash on the sides of the bases.
- Attach the pie tops, making sure they are properly sealed, pierce with a fork, and brush more egg wash on the top.
- Bake for 15-20 minutes or until the pastry is risen and golden brown.

- Preheat oven to 450°. In a small saucepan, combine cranberries, brown sugar, orange juice, flour and vinegar. Cook over medium heat until berries pop, about 15 minutes., Meanwhile, unroll crust into a 9-in. metal pie plate; flute edges. Sprinkle with cheese; bake 8 minutes or until cheese begins to melt. - Heat the oven to 200C/180C fan/gas 6 and line two baking trays with baking parchment. Unravel a sheet of filo pastry onto a chopping board, covering the rest of the filo with a damp tea towel so it doesn't dry out. Brush the filo sheet liberally with some of the melted butter, then cut into three strips lengthways.
- Spoon ½ tsp cranberry sauce over the top right-hand corner of each pastry strip and place a piece of brie on top. Fold the pastry over the filling to create a triangle, then continue to fold the pastry over itself down the length of the strip. Brush with more butter to seal, then sprinkle over the poppy seeds and place on the lined baking tray. Repeat with the remaining ingredients. The parcels can be covered and chilled in the fridge for up to a day or frozen for up to three months.
- Bake for 15-20 mins (or 20-25 mins from frozen) until deep golden brown. Leave to stand for 5 mins before serving with some extra cranberry sauce.
