WHITE CHOCOLATE CRANBERRY BLONDIES
Friends sometimes ask me to make these for wedding receptions. For a fancier presentation, I cut the bars into triangle shapes and drizzle white chocolate over each one individually. -Erika Busz, Kent, Washington

- Preheat oven to 350°. In a large microwave-safe bowl, melt the butter; stir in the brown sugar. Cool slightly., Add eggs, 1 egg at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk together flour, baking powder, salt and cinnamon; stir into butter mixture. Stir in cranberries and chopped chocolate (batter will be thick). Spread into a greased 13x9-in. pan., Bake until golden brown and a toothpick inserted in center comes out clean (do not overbake), 18-21 minutes. Cool completely on a wire rack., For frosting, beat cream cheese, confectioners' sugar and, if desired, orange zest until smooth. Gradually beat in half of the melted white chocolate; spread over blondies. Sprinkle with cranberries; drizzle with remaining melted chocolate., Cut into triangles. Store in an airtight container in the refrigerator.

HOMEMADE CRANBERRY NUT GRANOLA

Steps:
- Preheat the oven to 350 degrees F.
- Spread the pumpkin seeds and sunflower seeds on a baking sheet. Bake for 8 to 10 minutes until lightly toasted. Set aside to cool.
- Reduce the oven temperature to 325 degrees F. Spray a baking sheet with nonstick cooking spray. Set aside.
- In a small saucepan, combine the maple syrup, brown sugar, cranberry juice, and cinnamon over medium heat. Cook, stirring constantly, until the sugar has dissolved.
- In a medium bowl, mix together the oats, almonds, pumpkin seeds, sunflower seeds, and salt.
- Pour the maple mixture over the oat mixture and stir until combined. Spread the mixture onto the prepared baking sheet. Bake for 20 minutes. Remove the baking sheet from the oven. Stir in the cranberries and bake for an additional 10 to 15 minutes until the mixture begins to brown. Cool completely. Store airtight in a plastic container for up to 1 week.
CRANBERRY-GRANOLA BLONDIES
From EatingWell July/August 1995: "Packed with dried cranberries and low-fat granola, these firm bars are excellent travelers, full of complex carbohydrates, vitamins and trace minerals." I haven't tried these yet, but they're on my list of things to make. We use a granola full of sunflower seeds, pepitas, almonds, flax seed and pecans -- so the additional seeds and nuts would add to the fiber content (well, and the fat too). Exchange one-half whole wheat flour for some of the AP flour for more fiber too. By using Splenda Brown Sugar, you can easily adjust this for a diabetic diet. Enjoy!

- Preheat oven to 350 degrees F. Coat a 9 x 13 baking dish with cooking spray.
- Whisk together flour, baking powder and salt in a small bowl. Beat together sugar, oil and egg whites in a large bowl with an electric mixer on high speed until smooth, making sure no lumps of sugar remain.
- Add the dry ingredients to the wet and beat on low speed just until blended. Stir in the granola and dried fruit - the batter will be quite thick.
- Transfer the batter to the prepared baking dish; smooth the top. Bake until golden brown on top and the bars feel set when lightly pressed in the center, 20 to 25 minutes. Let cool in the baking dish on a rack.
- Cut into 20 bars.

- Preheat the oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with parchment paper and spray with nonstick cooking spray.
- Combine flour, sugar, baking powder, and salt together in a large bowl. Mix together butter, eggs, lemon juice, lemon zest, almond extract, and vanilla extract in another bowl until well combined. Add wet ingredients to the bowl with the dry ingredients and stir until well mixed. Mix in 1/2 cup of the cranberries and white chocolate chips.
- Spread batter into the prepared baking dish. Sprinkle remaining 1/4 cup of cranberries evenly over the top.
- Bake in the preheated oven until the edges are golden and the center is set, 20 to 25 minutes.
- Remove blondies from the oven to cool on a wire rack completely before slicing and serving.

- Preheat oven to 350F. Line an 11x7x1-1/2-inch or a 9x9x2-inch baking pan with foil; coat foil with cooking spray and set aside.
