CRANBERRY OAT SNACK MIX
This is a delicious treat! So good to snack on! Also makes a great little gift, to give to family and friends, at the holidays. Enjoy!

Steps:
- 1. In a saucepan, combine the first five ingredients; heat until the butter is melted. Stir until the sugar is dissolved.
- 2. In a large bowl, combine cereal, oats and nuts. Drizzle with the butter mixture and mix well.
- 3. Place in a greased 10 x15 baking pan. (I use parchment paper instead of greasing the pan) Bake, uncovered, at 275 degrees for 45 minutes, stirring every 15 minutes.
- 4. Cool completely, stirring occasionally. Stir in cranberries and chocolate covered raisins.
- 5. Store in an airtight container.
- 6. ENJOY!
CRANBERRY-NUT OATMEAL COOKIES
I made a few changes to a recipe on the back of a canister of oats. Now this is the only one I use. I often use hazelnuts in place of the pecans, and they are just as good. I hope you enjoy them as much as we do. You can make these larger or smaller; simply adjust the baking time. Keep loosely covered, and they will maintain their chewiness for several days, if they last that long.

- Preheat oven to 350 degrees F (175 degrees C). Place an oven rack in the upper third of the oven. Line baking sheets with parchment paper.
- Place unsalted butter and light brown sugar into the work bowl of a stand mixer and mix on medium-slow speed until very fluffy, 3 to 4 minutes. Beat in the vanilla extract, followed by eggs, one at a time. Reduce mixer speed to lowest speed and leave running.
- In a separate bowl, whisk together the rolled oats, flour, baking powder, cinnamon, kosher salt, and nutmeg. Pour the dry ingredients into the slowly running mixer in thirds; mix in dried cranberries and nuts until just incorporated. Using a large cookie scoop, place dough on prepared baking sheet about 2 inches apart.
- Bake one batch at a time in the preheated oven just until the edges are brown, 17 to 18 minutes. Allow to cool on baking sheets for about 5 minutes before removing to finish cooling on wire racks.

- Combine butter, honey, sugar, cinnamon, and salt over low heat until butter melts and sugar is dissolved.
- In large bowl combine cereal, oats, and nuts.
- Drizzle with butter mixture and mix well.
- Place in a 15x10x1 pan and bake uncovered at 274 for 45 minutes, stirring every 15 minutes. Allow to cool and stir in cranberries.

- In a large bowl, combine oats, Rice Krispies, cranberries, flax, 1 teaspoon cinnamon and nutmeg., In a large saucepan, combine brown sugar, corn syrup, oil and honey; cook and stir over medium heat until sugar is dissolved. - Preheat oven to 350 degrees F (175 degrees C). Lightly grease 11x7 inch baking pan.
- Pour melted butter into a mixing bowl, and beat in the egg, brown sugar, and vanilla extract. Sift the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and pumpkin pie spice together in a separate mixing bowl. Stir the flour mixture into the butter mixture until thoroughly blended. - Preheat oven to 350 degrees F (175 degrees C). Line an 8-inch square baking dish with parchment paper or waxed paper.
- Mix oats, cranberries, pecans, ground flax seed, chocolate chips, and wheat germ together in a bowl.

- Heat oven to 180C/160C fan/gas 4. Line the base of a 20cm square tin with baking parchment.
- In a large bowl, mix together the flour, oats, sugar and cranberries. Make a well in the centre and add the butter, golden syrup, egg and vanilla extract. Stir well until evenly damp.
- Tip into the tin and spread out evenly. Sprinkle with almonds and bake for 20-25 mins until lightly golden. Cool in the tin for 10 mins, then cut into 6 one way and 2 the other to make 12 bars. Dust with icing sugar.
