CREAMY COURGETTE & BACON PASTA
A quick and creamy carbonara-style tagliatelle that showcases delicious courgettes contrasted with cream and pancetta

Steps:
- Heat the olive oil in a large frying pan and sizzle the pancetta or bacon for about 5 mins until starting to crisp. Turn up the heat and add the grated courgette to the pan. Cook for 5 mins or until soft and starting to brown then add the garlic and cook for a minute longer. Season and set aside.
- Cook the tagliatelle according to the pack instructions and scoop out a cupful of cooking water. Drain the tagliatelle and tip into the frying pan with the bacon and courgette. Over a low heat toss everything together with the crème fraiche and half the Parmesan adding a splash of pasta water too if you need to loosen the sauce. Season to taste and serve twirled into bowls with the remaining Parmesan scattered over.

CREAMY PASTA WITH BACON

- Cook linguine according to package directions. Meanwhile, in a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. , In a small bowl, whisk flour and cream until smooth; stir into the pan. Bring to a boil, stirring constantly. Reduce heat; cook and stir for 1 minute or until thickened. Remove from the heat. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer., Drain linguine; add to the pan. Stir in bacon and cheese; heat through.

Steps:
- Bring a large pan of lightly salted water to the boil, then cook the pasta according to pack instructions.
- Meanwhile, heat the olive oil in a frying pan, then add the courgettes. Cook for 5 mins until softened and lightly golden. Reduce the heat, then add the lemon zest. Gently cook for a further min, add the soft cheese and milk, then mix together until the cheese melts. Season to taste.
- Drain the pasta and return to the pan. Add the contents of the frying pan and stir well. Serve immediately.

- Heat the oil in a large frying pan on a medium heat. Once hot add the bacon and fry for around 5 mins until it starts to crispen. Increase the heat and add the courgette. Cook for 5 mins until soft and starting to brown. Add and stir in the garlic and cook for a further minute. Add and stir in some salt and pepper and set aside.
- Bring to the boil and cook the tagliatelle (based on the cooking instrutions on the packet). Remove a cupful of the cooking tagliatelle water for use later on. Drain the tagliatelle and add to the frying pan with the bacon and courgette. Heat on low and mix everything together with the crème fraiche and half the parmesan. Add some of the saved pasta water to loosen the sauce a little bit if you feel the mix is a bit too sticky.
- Crack the 4 eggs into a seperate frying pan and fry to your liking. (Sunny side up, over easy etc)
- Serve creamy pasta into bowls and top each with a fried egg. Season to taste and sprinkle over the remaining parmesan and enjoy. Serve alongside garlic bread for an extra treat!
