CHEWY TOFFEES
Treat yourself to the ultimate sweet treat - chewy toffee. Toffees aren't hard to make, but remember to be careful when you're dealing with very hot sugar

- Neatly line the base and sides of a 20x30cm baking tin with baking parchment. Tip the sugars, cream and butter into a large heavy-based deep saucepan and heat gently, stirring occasionally until all the ingredients have come together and the sugars and butter have melted. Place a sugar thermometer or digital cooking thermometer in the pan, turn up the heat and boil everything together vigorously without stirring until the temperature reaches 125C. Remove from the heat and stir in the vanilla. Leave for a moment for any bubbles to settle, then carefully pour the molten toffee into the prepared tin, swirling the tin until the toffee covers the base. Leave the toffee for at least 2hrs to set - overnight is ideal.
- Use the parchment to lift the set toffee out of the tin and cut into squares or fingers. If the toffee is sticking to the knife, lightly oil the blade. Wrap the toffees in waxed paper and store in a jar for up to two weeks at room temperature or a month in the fridge.

GLAZED TOFFEE BONBONS

- Heat oven to 325°F. In large bowl, beat 1/2 cup butter, 1/2 cup brown sugar, the vanilla and egg with electric mixer on medium speed until light and fluffy. On low speed, beat in flour, baking soda and salt. Reserve 1/3 of the chopped candy for garnish. Stir remaining chopped candy into dough. Shape dough into 1-inch balls. On ungreased cookie sheets, place balls 1 inch apart.
- Bake 11 to 14 minutes or until edges start to brown and tops of cookies feel set when tapped. Place cooling racks on waxed paper. Immediately remove cookies from cookie sheets to cooling racks.
- Meanwhile, in 1-quart saucepan, heat 1/4 cup butter, 1/2 cup brown sugar and 2 tablespoons of the milk over medium-low heat, stirring frequently, until mixture just comes to a boil and sugar is dissolved. Stir in powdered sugar; beat with wire whisk if necessary to remove lumps. Immediately dip tops of cookies into glaze, or spread glaze on tops of cookies. (Cookies don't need to be completely cooled, just firm and set.) Place on rack; let stand about 10 minutes until glaze is set. If glaze starts to set in saucepan, reheat over medium-low heat and beat with whisk until softened.
- Place chocolate chips and vanilla chips in separate small microwavable bowls. Microwave each on High 1 1/2 to 2 minutes, stirring every 30 seconds, until melted and smooth. Using tip of spoon, drizzle each flavor generously over cookies. Sprinkle with remaining candy. Refrigerate 20 minutes to set quickly.

CREAMY GERMAN TOFFEE CANDY (SAHNE-BONBON) FOR ONE OR TWO
This recipe makes just a small amount of creamy, delicious toffee. Very quick and easy to make. A childhood favorite of mine that I've made many times with my mother and German grandmother. I've translated the recipe from a very old and treasured German children's cookbook.

Steps:
- Bring the milk and the sugar to a boil in a pot, stirring constantly and cook until the mixture turns a light-brown color.
- Pour the hot mixture onto a sheet of dampened parchment paper.
- When the mixture is about halfway set, use a dampened knife to cut it into small squares. Leave to dry completely.

- In a large bowl, combine confectioners' sugar, pecans, milk and butter. Roll into 1-in. balls. Place on waxed paper-lined baking sheets. Cover and refrigerate overnight., In a microwave, melt chocolate chips and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. - Heat Butter, Sugar and water in a 3 quart sauce-pan to a rolling boil.
- When mix reaches 305 degrees pour onto a greased large cookie sheet.
- Sprinkle chocolate Chips over the candy.
- As chocolate melts spread with a butter knife.
- Spread nuts evenly over the pan, shaking lightly until all nuts stick.
- Cool until hard.

EASY TOFFEE CANDY II
I was surprised this recipe wasn't on zaar yet. I got this recipe from Carnation and have been making it for a couple years. I tried one of the other versions on zaar, which are similar but does not have the sweetened condensed milk in it. I like this recipe much better! I hope you enjoy :)

- PREHEAT oven to 425°F Line 15 x 10-inch jelly-roll pan with heavy-duty foil.
- MELT 1/4 cup (1/2 stick) butter in medium saucepan. Pour into prepared jelly-roll pan. Arrange crackers over butter, breaking crackers to fit empty spaces.
- MELT remaining butter in same saucepan; add sugar. Bring to a boil over medium heat. Reduce heat to low; cook, stirring occasionally, for 2 minutes. Remove from heat; stir in sweetened condensed milk. Pour over crackers.
- BAKE for 10 to 12 minutes or until mixture is bubbly and slightly darkened. Remove from oven; cool for 1 minute.
- SPRINKLE with morsels. Let stand for 5 minutes or until morsels are shiny; spread evenly. Sprinkle with nuts; press into chocolate. Cool in pan on wire rack for 30 minutes. Refrigerate for about 30 minutes or until chocolate is set. Remove foil; cut into pieces.

- Preheat oven to 350°F Line a 9x13-inch baking sheet with parchment paper. Lining a baking sheet with parchment paper, overlapping the sides, makes for easy removal and cutting of squares.
