PINEAPPLE COLESLAW

When I was a child, my mother often served this salad with multicolored marshmallows sprinkled on top, much to my delight. The marshmallows added a touch of sweetness that really complemented this salad's tangy flavor. -Betty Follas, Morgan Hill, California

Steps:

  • For dressing, mix first 4 ingredients. Place cabbage and pineapple in a large bowl. Add dressing; toss to coat., Refrigerate until serving. If desired, sprinkle with paprika.

3/4 cup mayonnaise
2 tablespoons sugar
2 tablespoons cider vinegar
1 to 2 tablespoons 2% milk
4 cups shredded cabbage
3/4 cup pineapple tidbits
Paprika, optional

CREAMY COLESLAW WITH PINEAPPLE

We love creamy coleslaw with pineapple. This one comes out great. Goes great with B-B-Q ribs or pulled pork. If you don't want as sweet you can use less sugar and add a little more apple cider vinegar.

Steps:

  • 1. Toss all the slaw mix ingredients together in a large bowl.
  • 2. Put all the dressing ingredients in a separate bowl and whisk well
  • 3. Pour dressing over slaw mix and toss well. Cover and refrigerate for at least 2 hours.
  • 4. Before serving, toss well again.

SLAW MIX
6 c finely shredded cabbage
2 medium carrots, shredded
1 Tbsp grated onion
1 can(s) drained pineapple chunks, diced, 18 - 20 oz.
to taste salt and pepper
DRESSING
2/3 c mayonnaise
2 Tbsp apple cider vinegar
1 Tbsp vegetable oil
2 Tbsp celery seed
1/2 c milk or half & half
1/2 c sugar

Steps:

  • In a large bowl, toss together the cabbage, carrot, onion, and parsley. In a small bowl, whisk together the mayonnaise, sour cream, pineapple juice, sugar, and celery seed. Toss the vegetables with the dressing and season with salt and pepper to taste. Refrigerate for at least 2 hours before serving. This slaw is best if served within a day.

One 3-pound head green cabbage, trimmed, shredded, and chopped
1 medium carrot, grated
1/3 cup minced red onion, soaked in cold water for 5 minutes and drained
1 tablespoon minced flat leaf parsley leaves
1/2 cup prepared mayonnaise
1/2 cup sour cream
3 tablespoons unsweetened pineapple juice
1 tablespoon granulated sugar
1 teaspoon celery seed
Kosher salt and freshly ground black pepper
