- In a mixing bowl or food processor, combine the cream cheese and marshmallow creme . Blend until smooth. Add the vanilla. Continue blending until the mixture is thick and creamy.

SWEET PINEAPPLE CREAM FRUIT DIP
This recipe came out of a recent cookbook on diabetic cooking. A friend of mine made a copy of the recipe but couldn't recall the name of the cookbook!

Steps:
- Combine cream cheese, sour cream & sugar substitute in small bowl.
- Place pineapple in a fine mesh strainer, & using the back of a spoon, press down firmly to release excess liquid.
- Combine drained pineapple with cream cheese mixture, & stir until completely blended.
- Serve immediately or cover with plastic wrap & refrigerate until ready to serve. Can be made up to 24 hours in advance.
FRUIT DIP
Great with fresh fruit! Use apples, pineapple chunks, grapes, oranges or other fruits of your choice. Have toothpicks available to spear the fruit for dipping. Great for showers or parties!

This is an excellent simple recipe that came from our kitchenaid stand mixer instruction booklet. Goes great with sliced fruit. Add 1/2 cup chopped nuts and it can serve as a sweet sandwich filling on whole wheat bread for tea sandwiches.
