Even though our children are grown, my husband and I remain busy. So we rely on speedy recipes that call for everyday ingredients. This peppery treatment really wakes up green beans. - Cook beans according to package directions. Meanwhile, in a skillet, cook bacon, onion and green pepper over medium heat until bacon is crisp and vegetables are tender. Remove with a slotted spoon., Stir the flour, brown sugar, Worcestershire sauce, salt, pepper and mustard into the drippings until blended. Stir in tomatoes. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain beans and add to skillet. Stir in bacon mixture.

- 1. If using fresh green beans, blanch and chill in ice water. Frozen green beans, thaw, rinse with warm water.
- 2. Add diced tomatoes, mix in sliced olives.
- 3. Mix ingredients together, add balsamic vinaigrette. Toss lightly. Salt and pepper to taste. Top with feta cheese and serve!
GREEN BEAN CASSEROLE SALAD

- Bring a large pot of salted water to a boil. Fill a bowl with ice water and set aside.
- Add the green beans to the boiling water and cook until bright green and tender-crisp, about 4 minutes. Transfer the green beans to the ice bath to stop the cooking. Drain the beans and add them to a mixing bowl.
- Add the olive oil to a large skillet over medium-high heat. When the oil is shimmering, add the mushrooms, shallot, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until the vegetables are browned, 5 to 7 minutes. Add the cheese and stir to melt. Turn the heat off and add the mixture to the bowl with the green beans. Toss until everything is creamy and thoroughly combined. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper. Toss to combine. Top with the fried onions. Serve at room temperature or refrigerate until ready to serve.
CREAMY GREEN BEAN SALAD

- For the salad: Melt the butter in a large, heavy-bottomed skillet over medium-high heat. Add the mushrooms to the melted butter and cook, stirring occasionally, until they are golden brown and have released their moisture, about 6 minutes. Stir in the thyme, Worcestershire, celery, garlic and salt to taste. Cook until the garlic and thyme are aromatic and the celery is starting to brown on the edges, about 2 minutes. The celery should still be lightly crisp. Add more salt if desired. Take off the heat and spread on a sheet tray to cool.
- Meanwhile, bring a medium pot of water to a boil. Set up a large bowl of ice water and line a sheet tray with a paper towel or kitchen towel. Generously season the boiling water with salt. Add the green beans and cook for 2 to 3 minutes. Remove with a spider or drain in a colander and transfer to the ice bath. Once cooled, transfer the green beans to the lined sheet tray and thoroughly pat dry.
- For the creamy Parmesan dressing: Whisk together the yogurt, Parmesan, mayonnaise, sherry vinegar, 1/4 teaspoon salt and 1 teaspoon pepper in a large bowl. Refrigerate if not using immediately.
- To assemble: To the bowl of dressing, add the green beans, mushroom mixture and romaine. Toss to combine and everything is fully coated. Transfer to a serving dish and top with the almonds and crispy fried onions. Serve immediately.

- Place beans in a 6-qt. stockpot; add water to cover. Bring to a boil. Cook, covered, 8-10 minutes or until crisp-tender. Drain and immediately place in ice water. Drain and pat dry., In a small bowl, whisk oil, lemon juice, vinegar, salt, garlic powder, mustard and pepper. Drizzle over beans. Add onion; toss to coat. Refrigerate, covered, at least 1 hour. - Heat grill to medium-low. Bring a large pot of salted water to a boil, and prepare a large bowl of ice water. In another large bowl, combine 2 tablespoons oil, garlic, lemon zest and juice; set aside.
- Cook green beans in boiling water until crisp-tender, 2 to 3 minutes. Using a slotted spoon, transfer immediately to ice-water bath. Drain beans well, pat dry, and add to bowl with dressing. Set aside.
- Toss onion wedges with remaining tablespoon oil; season with salt and pepper. Grill until lightly charred, 4 to 6 minutes per side. When cool, trim root end off, and thinly slice onions; add to bowl with green beans, and toss to combine.

- Melt butter in a medium sauce pan over high heat.
- Add bacon and ham and cook, stirring for 2 minutes.
- Add onions and cook, stirring until soft, about 4 minutes.
- Add tomatoes and their juice and cook, stirring for 4 minutes.
- Add 2 cups of the water, salt, pepper and beans.
- Reduce heat to medium and cook, stirring occasionally, until beans begin to soften, about 20 minutes.
- Add remaining 1 cup water and cook until beans are very tender, about 10 minutes.
SCALLOPED CREOLE GREEN BEANS
This is the best green bean dish I have ever had! The mixture of onion, bell pepper, celery, tomatoes, and cheese blends so nicely with the green beans. I got the recipe from an friend's mother over 20 years ago and she got the recipe from her mother who had a local cooking show in the southwest Louisana/ southeast Texas area. You can taste the southern Creole influence in this dish. You won't be disappointed!

- Preheat oven to 350 degrees.
- Fry bacon until crisp and set aside. Saute onion, celery, and bell pepper in bacon drippings until transparent.
- Transfer onion mixture to a medium sauce pan and add tomatoes, salt, pepper, and sugar. Cook, covered over low heat for 1 hour. (yes--1 hour!).
- Add cheese to sauce mixture and stir until melted.
- Place green beans in casserole dish, crumble bacon over beans, and pour sauce over top.
- Bake, uncovered for 1 hour.
