CRISPY PERSONAL PITA PIZZAS

Crispy Personal Pita Pizzas image

Steps:

  • Preheat the oven to 400 degrees F.
  • Brush both sides of each pita round with a liberal coating of olive oil and place all 4 rounds onto a baking sheet. Sprinkle the shredded cheese in an even layer on each pita. Place a single layer of tomato slices on top of the cheese and sprinkle garlic salt over top of each.
  • Bake until the bottoms are golden brown and the pitas are crispy, 15 to 20 minutes. Top with fresh basil.

2 pocket pitas, each split into 2 rounds
2 tablespoons olive oil
2 cups shredded scamorza cheese (you can also use mozzarella)
1 Roma tomato, thinly sliced
Garlic salt, for sprinkling
Fresh basil leaves, for topping

Whole parsley leaves add brightness to this crunchy Mediterranean salad. If you like,boost the flavor even more with our version of Za'atar, a Middle Eastern spice blend.

Steps:

  • Preheat oven to 350 degrees. On a rimmed baking sheet, toss pita with 1 1/2 tablespoons Za'atar (if using) and 1 tablespoon oil; season with salt and pepper. Bake until pita chips are golden, 12 to 15 minutes.
  • In a large bowl, combine 1/4 cup oil, lemon juice, and garlic; season with salt and pepper. Add lettuce, cucumber, tomatoes, parsley, mint, scallions, pita chips, and remaining Za'atar (if using). Season salad with salt and pepper and toss to combine. Serve immediately.

1 pint cherry tomatoes, halved
1 1/2 cups fresh parsley leaves
1/3 cup fresh mint leaves, torn
2 scallions, sliced

Steps:

  • Preheat oven to 375 degrees. Butter pitas and sprinkle with chives, salt, and pepper. Cut each into quarters. Divide between two baking sheets. Bake until golden, about 15 minutes. Let cool. Store in an airtight container up to 1 day.

1/2 cup (1 stick) unsalted butter, room temperature
8 pitas (each 3 1/2 inches), split
3 tablespoons finely chopped fresh chives
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

  • Break the pita bread into small bite-size pieces. Heat 3 tbsp of olive oil in a large pan until shimmering, and add the pita bread. Fry briefly until browned, tossing frequently. Using a pair of tongs, transfer the fried pita chips to a plate lined with paper towel to drain. Season with salt, pepper and sumac.
  • In a large mixing bowl, combine the chopped lettuce, cucumber, tomatoes, green onions with the sliced radish and parsley.
  • To make the dressing, in a small bowl, whisk together the lemon or lime juice, olive oil, pomegranate molasses (if using), salt, pepper and spices.
  • Pour toss lightly. Finally, add the pita chips, and more sumac if you like, and toss one more time. Transfer to small serving bowls or plates. Enjoy!

  • Preheat the oven to 250°F. Cut the pitas into 1-inch thick strips. Lay the cut pitas in a single layer on a rimmed baking sheet. Brush the cut pita with the olive oil. Sprinkle evenly with the garlic powder and salt. Place the pan in the oven and bake , stirring every 15 minutes, until crisp all the way through and deep golden brown. Begin checking the pita crisps for doneness at about 45 minutes. Mine usually take an hour. Let cool completely. Store in an airtight jar at room temperature for up to two weeks.
  • At least 10 minutes, but up to 6 hours* before serving, remove the core end of the Romaine heart. Slice the heart in half lengthwise, then turn 90° and chop across those slices to create bite-sized pieces of Romaine lettuce. Add that to a large mixing bowl. Add the remaining salad ingredients to the mixing bowl. Shake the salad dressing very firmly, pour about 1/3 of it over the contents of the mixing bowl and use your clean hands to toss to cover everything evenly. Let stand anywhere from 10 minutes to 6 hours before serving. Refrigerate leftovers.
