SLOW COOKER STEAK FAJITAS
These slow cooker fajitas will melt in your mouth, the steak always comes out soft and tasty! Serve with sour cream, guacamole, and/or salsa. Sour cream helps if the spice is too strong.

Steps:
- Cut flank steak into 6 equal portions and place in a slow cooker. Add tomatoes, onion, bell peppers, jalapeno pepper, garlic, chili powder, cumin, coriander, and salt.
- Cook on Low for 8 to 10 hours, or on High for 4 to 6 hours, until steak is fall-apart-tender.
- Remove steak and shred. Return to slow cooker.
- Serve hot with tortillas and shredded cheese, allowing everyone to make their own fajita.

- Place peppers and onion in a 5-qt. slow cooker. Top with beef. Combine water, vinegar, lime juice and seasonings; pour over meat. SPICY FAJITA SOUP

- In the sleeve of a slow cooker, add the onions, peppers, corn, tomatoes, garlic, 1 tablespoon chile powder, chipotle, and broth. Season with and salt and pepper, to taste. Cook on low for 4 to 6 hours.
- In a deep skillet over medium heat, add the canola oil and heat to 365 degrees F. Fry the tortilla pieces until brown and crispy, 1 to 2 minutes. Drain on brown paper and immediately season with salt and the remaining 1 tablespoon chile powder. (Reserve half the chips for Online Round 2 Recipe Creamy Mexican Dip with Spiced Chips.)
- Preheat the broiler.
- (Reserve 1 cup of the onion and pepper mixture for Round 2 Recipe Creamy Mexican Dip with Spiced Chips.) Ladle the soup into ovenproof bowls or crocks and top each with 2 tablespoons cheese. CROCK POT BEEF FAJITA SOUP

- 1. This meal amounts/cooks down to 1 lean protein serving of beef, 2-ish green servings of mushroom and green peppers, and 2 condiments of bouillon, garlic clove, and jalapeno pepper. Feel free to substitute ingredients to your own taste.
- 2. Add prepared ingredients to crockpot. Cook for 6-8 hours on low. Remove from heat and serve.
- 3. This will also do well for a family meal if added to a bed of rice or used for fajita taco filling. A Medifast-er can feel more comfortable with a bed of cauli-rice when seated at a family meal. I suggest non-Medifast-ers add onions, ground pepper, and other spices for the full "fajita" effect.

- Cook onions until light brown.
- Add garlic.
- Add beef and spices. Brown beef.
- Add tomatoes and cook till juice is gone.
- Add broth.
- Cook till beef is almost cooked.
- Add all other ingredients except cilantro. Cook for 15 more minutes or until all vegetables are ready.
- Add cilantro. Cook 5 minutes more.
- You can garnish with avocado, cilantro, pico de gallo, lime juice or Monterey jack cheese. You can even add a little cooked rice.
- Note: You can leave the spinach out but it adds to a more healthy and balanced meal.

- Brown the ribs: Season the ribs generously with salt and pepper. Heat 1 tablespoon of oil in a large stock pot (or Dutch oven) over medium-high heat until shimmering. Add half of the ribs and cook until browned on all sides, about 6 minutes total. Transfer to the slow cooker and repeat with another tablespoon of oil and remaining ribs, transferring those to the slow cooker when browned as well.
- Sauté the onions and peppers: Reduce heat to medium and add another tablespoon of oil to the pot. Add the onions and peppers. Season with a bit of salt and pepper. Sauté until onions are soft and translucent, stirring occasionally, about 5-7 minutes. Add in the garlic and cook until fragrant, about 30 seconds. Add in ¾ cup of stock to deglaze, scraping the brown bits up off the bottom of the pot. Transfer to the slow cooker with the ribs.
- Add in 4 cups of stock, tomatoes, corn, black beans and fajita seasoning. Cover and cook on low for 5 ½ hours or until beef is tender.
- In a small bowl mix together remaining ¼ cup of stock with masa harina. Mix well and add it to the slow cooker. Stir to combine. Cover and continue to cook on low for an additional 30 minutes.
