HEARTY BEANS WITH BEEF

My husband raved about this sweet bean dish after tasting it at a party, so I knew I had to get the recipe. It's perfect for get-togethers because you can mix it up a day early and toss it in the slow cooker a few hours before your guests arrive. -Jan Biehl, Leesburg, Indiana

Hearty Beans with Beef image

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a 5-qt. slow cooker. Stir in the remaining ingredients. , Cover and cook on high for 3-4 hours or until heated through.

1/2 cup ketchup

1/4 teaspoon Worcestershire sauce

CROCK POT BEEF N BEANS

This is an easy throw together crowd pleaser. It can be used as a side dish, by decreasing the amount of liquid or add more liquid and it will become a hearty soup. It is enough to feed several and it freezes well if you are planning ahead. Serve with garlic bread and enjoy.

Crock Pot Beef N Beans image

Steps:

  • Soak Pinto beans overnight in water per package directions, rinse well.
  • Brown ground beef until no longer pink. Dump rinsed beans, ground beef and smoked sausage into crock pot. Chop onion and garlic, add to crock pot. Dump in can of tomatoes and taco seasoning, stir well. Add water until liquid is 1 to 2 inches above beans. (Beans use a lot of liquid and you don't want them to get dry.) Cook on low 8- 12 hours or high 5-7 hours. Serve with garlic bread in a bowl.

Crock Pot Sweet and Spicy Pork or Beef Ribs and Beans image

Steps:

  • Place the drained beans in the crock pot; set aside.
  • Cut the pork or beef ribs into serving-size pieces, then season with seasoned salt and black pepper.
  • Place the ribs in a broiler pan, then broil in oven for about 20-25 minutes, turning once.
  • Add the browned ribs to the slow cooker and then sprinkle the onion, fresh garlic and green pepper over the ribs.
  • In a saucepan combine the BBQ sauce, jalapeno jelly and Tabasco hot sauce; cook stirring over low heat until melted and combined.
  • Pour the mixture over the ribs and toss to coat with the sauce.
  • Cover and cook on HIGH for about 5-6 hours or on LOW for about 9-10 hours.
  • Remove the ribs and skim off any fat from the sauce.
  • Arrange the ribs over the bean mixture.

3 (16 ounce) cans pinto beans, drained (can use only 2 cans)
4 lbs country-style pork ribs (or use beef ribs)
1 tablespoon seasoning salt
black pepper
1 large onion, chopped
1 -2 tablespoon fresh minced garlic (or to taste)
1 small green bell pepper, seeded and chopped
1 (10 ounce) jar green jalapenos (or use red jalapeno jelly)
1 (18 ounce) bottle hickory flavored barbecue sauce
1 -2 tablespoon fresh minced garlic (or to taste)
1 teaspoon Tabasco jalapeno sauce (try to use the green Tabasco hot pepper sauce for this)
1 teaspoon salt

Beef 'n' Bean Torta image

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes, olives, chili powder, salt, pepper and hot pepper sauce. Spoon about 1-2/3 cups into prepared slow cooker; top with one tortilla and 1/4 cup cheese. Repeat layers three times., Cover and cook on low for 4-5 hours or until heated through. Using foil strips as handles, remove the tortilla stack to a platter. If desired, sprinkle with cilantro and serve with salsa, sour cream, lettuce and tomatoes.
