Easy version of chai tea, using whole spices and sweetened condensed milk. To vary the flavor, try adding a bit of star anise, fennel, allspice, vanilla bean, or nutmeg. For a sweeter tea, stir in a bit of brown sugar.

- Pour water into the crock of a slow cooker. Stir in the ginger, cardamom pods, cloves, cinnamon sticks, and peppercorns. Turn to High; simmer for 8 hours.
- Steep tea bags in the hot spiced water for 5 minutes. Strain tea into a clean container. Stir in sweetened condensed milk; serve hot.

- Place first 5 ingredients on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Place spice bag and water in a 5- or 6-qt. slow cooker. Cook, covered, on low 8 hours. Discard spice bag., Add tea bags; steep, covered, 3-5 minutes according to taste. Discard tea bags. Stir in milk; heat through. Serve warm.

- 1. Measure the water,milk,and tea bags in to the slow cooker.Stir to combine.
- 2. Add the rest of the ingredients,and stir. Cover slow cooker and cook on high 1 1/2 hours-2 hours.
- 3. Pour tea through a sieve in to a large bowl, or container. Discard the tea bags,and any sediment the sieve catches. Serve hot,or refrigerate,and serve cold.
- 4. Store in a pitcher,and keep refrigerated for up to 3-4 days. Reheat in microwave to serve hot,or add ice for Iced Chai tea. This is delicious!!

Steps:
- In large saucepan combine first nine ingredients.
- Bring to a boil over high heat.
- Reduce heat to low and simmer ten minutes.
- Remove from heat and strain with fine sieve or through coffee filters.
- Return to pot and add honey until melted.
- Add milk and heat through, but do not boil.
- Serve in clear mugs with a pinch of cinnamon on top.
- Merry Christmas!
- You can also store the tea without the honey and milk in the fridge, then just reheat and add milk and honey to taste.
- This is a nice tea to serve with gingerbread or shortbread cookies at gatherings.
