Steps:
- Place first 11 ingredients in a 6-qt. slow cooker. Cook, covered, on low until vegetables are tender and flavors are blended, 5-6 hours., Stir in pasta; cook, covered, on high until pasta is tender, 15-20 minutes. Discard bay leaf; stir in spinach until wilted. Serve with cheese.

CROCK POT MEXI-MEATBALL RICE SOUP
A simple and comforting crock pot soup. It's so easy that the only work you have to do is chop the onions and cilantro; the rest is a "dump and go"! Recipe is very adjustable to fit everyone's diet preferences: if you're watching your fat intake and/or are watching carbs, use cooked turkey meatballs, omit the rice and use low fat or fat free toppings. You can also use low sodium broth and tomatoes, if watching your salt intake.

- Chop onions and cilantro.
- Combine all ingredients in a crock pot.
- Cook for 4 hours on High or cook for 8-9 hours on Low.
- Ladle soup in bowls and garnish with a dollop of sour cream and a sprinkle of shredded cheese.
CROCK-POT MEATBALL STONE SOUP
In the child's story, Stone Soup is literally made with a stone plus other soup ingredients neighbors might have and a delicious soup is made. In this version, the stone is omitted but you still end up with a delicious soup, and one that is easily made as well.

- Cover and cook on LO heat 9-11 hours or until vegetables are tender.
- Stir in the frozen vegetables which have been thawed. Cover and cook on HI heat 1 hour.

Steps:
- Place first seven ingredients in large bowl. Mix thoroughly with your hands just until combined. (I wear food prep gloves.) Shape into approximately 30 1-inch balls.
- Bake in an ungreased oblong pan (13x9x2) in a 400°F oven until light brown, 20-25 minutes. OR: microwave meatballs in an ungreased baking dish, 6 minutes on High, turning once. OR: cook over medium heat in frying pan, turning occasionally, until brown, about 20 minutes.
- Place cooked meatballs and spaghetti sauce in crock pot. Cook on low for about 2 hours. If you cook longer, stir every hour or so.
- Place meatballs and sauce in buns/rolls and top with mozzarella cheese.
- Note, I microwave the meatballs to cook them.
- (A friend places the raw meatballs & sauce in the crock-pot and cooks them for 8+ hours on low, but I have never tried this.).
