COUNTRY FRIED BUTTERNUT SQUASH
This is a truly delicious butternut squash recipe! I saute it on a large griddle in just a small amount of oil, and it turns out perfectly. I found this on Allrecipes by Maryanne. Her grandmother won a blue ribbon with this recipe and I can see why!

Steps:
- Combine egg and milk together in a pie plate or flat bowl.
- In a second flat bowl, combine flour, cornmeal, salt, pepper and garlic salt.
- Peel butternut squash.
- Cut a slice off the bottom of the squash and stand it securely on cutting board.
- With a sharp knife, slice peel off from top to bottom, continuing around the squash until tough peel is completely removed.
- Slice squash into 1/2 inch circles.
- dip squash slices first in the milk/egg mixture and then dredge in the flour mixture.
- Fry or saute in a frying pan or griddle in oil until golden brown on each side, about 2-3 minutes a side.

CRUNCHY BUTTERNUT SQUASH FRIES
Haven't got the chance to try this yet, but it looks and sounds great. Would be a great appetizer for fall! Defiantly give it a try. I will update once I get a chance to try it myself.

Steps:
- Heat oven to 425°F.
- Line two baking sheets with aluminum foil and spray with nonstick cooking spray. Microwave squash on HIGH for 2 minutes.
- Cut squash in half length and scoop out the seeds. Peel squash with vegetable peeler. Cut into quarters. Cut quarters into 4x3/4-inch sticks.
- Mix together the cornflake crumbs and the seasoned salt in a shallow dish. Pour the maple syrup into a second shallow dish. Dip the squash sticks into syrup and then coat crumb mixture. Place coated sticks in a single layer on a prepared pan.
- Bake for 45 to 60 minutes or until squash sticks are fork tender.

Steps:
- Heat oil in a deep-fryer or large frying pan to 350 degrees F (175 degrees C).
- Beat egg, milk, and salt in a shallow bowl. Place bread crumbs in another shallow bowl.
- Coat both sides of squash slices in flour. Dip each slice in the egg mixture, then coat both sides with bread crumbs.
- Place 4 to 5 slices in the hot oil and fry until golden brown and fork-tender, about 3 minutes on each side, using tongs and a fork to help turn them over in the pan. Do not overcrowd; overcrowding will reduce crispiness. Set fried slices on a paper towel-lined plate to absorb excess oil. Continue frying remaining slices. Let cool, about 5 minutes.
- "Frost" slices with some of the vegetable cream cheese as desired. Serve while still warm, or at room temperature.
