BAKED FRENCH TOAST WITH MAPLE SYRUP AND GRANOLA
This is a recipe that I developed while feeding a group for a Sunday brunch. It can be made the night before; it will pick up a more intense flavor.

Steps:
- Butter a 9x13-inch baking dish. Lay the bread slices into the prepared baking dish in 2 layers. Beat eggs, half-and-half cream, orange juice, white sugar, brown sugar, cinnamon, and nutmeg together in a bowl until smooth, and pour over the bread. With a large spoon, press the bread down into the egg mixture so all the bread becomes soaked with the mixture.
- Sprinkle the granola evenly over the casserole, and drizzle with maple syrup and melted butter. Cover the dish with plastic wrap, and refrigerate overnight.
- About 1 hour before serving, remove the casserole from the refrigerator, and take off the plastic wrap. Preheat oven to 300 degrees F (150 degrees C).
- Bake in the preheated oven for 30 minutes, then turn oven temperature up to 375 degrees F (190 degrees C). Bake the casserole until browned, about 15 more minutes. Serve warm.

CRUNCHY FRENCH TOAST
Steps:
- In a shallow bowl, whisk eggs, milk, vanilla and salt until blended. In another shallow bowl, toss cornflakes with oats and almonds., Heat a griddle coated with cooking spray over medium heat. Dip both sides of bread in egg mixture, then in cereal mixture, patting to help coating adhere. Place on griddle; toast 3-4 minutes on each side or until golden brown. Serve with syrup.

CRUNCHY GRANOLA
Steps:
- Preheat oven to 275 degrees F.
- Line 2 cookie sheets with parchment paper and reserve.
- Combine brown sugar and water in a 4-cup microwave proof glass measuring cup or bowl. Place in microwave on high for 5 minutes and cook until sugar is completely dissolved. Remove from microwave, add vanilla extract and salt.
- In a large mixing bowl, combine oats, nuts, and brown sugar syrup mixture. Stir until thoroughly mixed. Spread the granola onto cookie sheets and bake 45 minutes to 1 hour or until golden and crunchy.
- When the mixture comes out of the oven, it is still very pliable. You may choose to add in dried fruit as a finishing touch at this time. When granola has cooled completely, store in an airtight container.

CRUNCHY GRANOLA
Steps:
- In a small saucepan, combine the honey, oil and brown sugar; cook and stir over medium heat until sugar is dissolved. Remove from the heat; stir in vanilla. , In a large bowl, combine the oats, almonds, coconut, sesame seeds and sunflower kernels. Add honey mixture, stirring until evenly coated. Spread onto two ungreased baking pans. , Bake at 300° for 20 minutes, stirring frequently. Stir in raisins. Bake 10 minutes longer. Cool, stirring occasionally. Store in an airtight container.

- Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet. Place crushed cereal in shallow bowl; set aside. In medium bowl, beat eggs, orange juice and salt with wire whisk until well blended.
- Spray griddle or 12-inch skillet with cooking spray; heat to 350°F or over medium heat. Dip each slice of bread into egg mixture, turning to coat both sides; coat with cereal. Place on griddle; cook 4 to 6 minutes, turning once, until golden brown on both sides.

GRANOLA CRUNCH FRENCH TOAST - OLIVES & LAMB

- Place the granola in a food processor and pulse it a few times until it breaks down into small crumb sized pieces. If you don't have a food processor, you can place the granola inside a plastic resealable bag and crush it with a rolling pin. Pour the granola into a shallow dish and set it aside for later.
- In a bowl, whisk together the eggs, milk, vanilla extract, cinnamon, sugar, and salt until everything is combined and all the sugar has dissolved.
- Working in batches, dip the challah slices into the milk mixture and allow it to absorb the liquid for about 15 seconds. Lift the challah out of mixture and let any excess liquid drip off. Place the challah into the dish with the granola. Completely coat both sides with granola.
- Heat a pan over medium low heat. For each batch of french toast you cook, use about 1/2 tablespoon of unsalted butter to grease the pan. When the butter has melted, add in the challah. Cook the challah for about 2-3 minutes on each side until the granola has toasted and developed a golden brown color. Remove the french toast from the pan and continue cook the remaining slices. You may need to wipe out the pan with a paper towel after cooking each batch to prevent any small granola pieces from burning.
