Teriyaki Beef Burgers image

Steps:

  • In a large bowl, combine the beef and water chestnuts. Shape into six patties. Place in a 13x9-in. dish. , In a small bowl, combine the soy sauce, sherry or broth, onions, brown sugar, garlic and ginger. Pour 1/2 cup over patties; cover and refrigerate for 2-3 hours or overnight. Cover and refrigerate remaining marinade for basting. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill patties, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear, basting occasionally with reserved marinade. Serve on lettuce-lined buns.

  • 2. Mix the meat and water chestnuts together.
  • 3. Shape the mixture into 6 patties, each about 3/4-inch thick.

Steps:

  • Gently shape beef into 4 balls, shaping just enough to keep together (do not compact). In a large skillet, heat oil over medium heat. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers; cook until well browned and a thermometer reads at least 160°, about 1 minute. Repeat with remaining beef. Remove from skillet; wipe skillet clean., Combine mayonnaise and salsa; reserve half for serving. Spread remaining mixture over tortillas. On the center of each tortilla, place 1 slice cheese, 1 burger and 1 tostada shell.
