- Split bread in half lengthwise; cut into four pieces. Fry eggs in a large non-stick skillet coated with cooking spray until yolks are set. Layer bread bottoms with salami, ham, egg and cheese; replace tops., Cook on a panini maker or indoor grill for 2 minutes or until bread is browned and cheese is melted.

- Preheat oven to 400°.
- Peel the hard-boiled eggs and cut in half lengthwise; remove the yolks.
- In a small bowl, mash the yolks and add mayonnaise to make a thick paste.
- Mash in the salt, pepper, mustard powder, half the cheese, and lime juice.
- Taste and adjust seasoning as needed.
- Use a spoon to place the yolk mixture back into the egg halves.
- Make the sauce by sautéing the onion and green pepper in olive oil until limp.
- Add the minced garlic and saute an additional 2 minutes.
- Stir in the tomato sauce and cook briefly; taste the sauce and add salt and pepper as needed.
- Place the stuffed eggs in a lightly buttered shallow baking dish or cake pan.
- Pour the sauce over the stuffed eggs and sprinkle with remaining cheese.
- Bake for about 15 minutes until the cheese melts and browns slightly.
- Sprinkle the top of the dish with fresh chopped cilantro.
- Serve hot over rice or with bread or toast.

- Preheat oven to 350°F.
- Cut eggs in half lengthwise.
- Remove yolks and set whites aside.
- In small bowl, mash yolks with fork.
- Stir in 1/2 cup of cheese, milk, salt, and pepper until well blended.
- Fill each half egg with one heaping Tablespoon yolk mixture.
- Place in 8x8x2-inch baking dish.
- In medium saucepan over medium heat, cook onion and pepper in butter until crisp-tender, about 3 minutes.
- Stir in tomato sauce and bring to boiling.
- Pour over eggs.
- Sprinkle with remaining cheese.
- Bake until hot and bubbly and cheese is melted, about 15 minutes.
- Serve over rice and garnish with parsley, if desired.

- Add the sliced onions and the juice from the oranges and limes to a large plastic bag to marinate the pork in. Pierce the pork all over with a sharp knife and stuff the cloves of smashed garlic into the holes. Mix all the dry ingredients for the pork together and rub it all over the outside of the pork. Place to pork in the bag with the marinade and refrigerate. Marinate the pork for anywhere from 1 to 3 hours.
- Remove the pork from the refrigerator. Don't throw the marinade out! Heat the olive oil in large dutch oven. When the oil is hot, sear the pork on all sides. Add the marinade, with the onions, to the dutch oven along with the water and bring to a boil. Cover and place in the oven, cook for 4 to 8 hours.

- In a Dutch oven, heat olive oil over medium heat. Add green peppers and onions. Sauté for about 3 minutes. Add garlic and cook for 30 seconds. Add rice, beans with liquid, water, cumin, oregano, bay leaf, salt and pepper. Cover, reduce heat to simmer, and cook for 40 minutes. DO NOT OPEN THE LID. The steam is what cooks the rice. After 40 minutes, remove from heat. Keep the lid on for another 10 minutes. Fluff with a fork.
- While the rice cooks, make the tortillas. In a large nonstick skillet, heat avocado oil over medium-high heat. Fry corn tortillas for about 2 minutes on each side until they are all golden brown and crisp. Set aside. *You can transfer the avocado oil to a jar and reuse in the future.
- In the same skillet, heat a tablespoon of oil. Crack eggs into the pan and cook for 3 minutes, or until the whites are set. Remove from pan and season with salt + pepper. Set aside.
- To assemble, add a tortilla to a plate. Spoon about a 1/4 cup of black beans + rice (or cauliflower congri) over each tortilla. Top with one fried egg, a spoonful of salsa and sliced avocado. Garnish with cilantro and queso fresco. Enjoy!
