CUCUMBER-FETA TOASTS
Toasted bread spread with feta and topped with sliced cucumber makes a cool and refreshing appetizer.

Steps:
- Preheat oven or toaster oven to 450 degrees. Split baguette lengthwise and lightly brush cut sides with 2 teaspoons olive oil. Bake until golden around edges, 5 minutes. Meanwhile, in a small bowl, mash together feta, 4 teaspoons oil, and lemon juice with a fork. Season with salt and pepper. Spread feta mixture evenly over toasted baguette and top with cucumber. Season with salt, pepper, lemon juice, and a drizzle of oil. Cut into pieces to serve.

- Cut cucumbers in half lengthwise. Using a spoon, remove seeds and discard. Cut cucumbers into 1/2-in. cubes; place in a bowl. Sprinkle with salt. Stir in onions. Combine the cheese, lemon juice, oil and pepper; add to cucumber mixture and stir gently.

- Preheat oven to 350 degrees. Spread pita squares in a single layer on a rimmed baking sheet, and bake until they are nicely crisp, about 20 minutes. Remove from oven. In a small bowl, whisk together vinegar and olive oil, and season with salt.
- In a medium salad bowl, combine toasted pita bread, celery, and cucumber; add vinegar mixture, and toss well to combine. Just before serving, add mint and watercress; gently toss again. Sprinkle feta cheese over the top, and season with pepper.

- Preheat oven to 400°F (200°C). Place baguette slices on a baking sheet. Drizzle with 2 Tbsp (30 mL) canola oil. Bake 10 minutes. Turn slices over and bake about 2-3 minutes longer, or until bread is toasted (dry) and golden brown in colour.
- Meanwhile, combine feta cheese, canola oil, lemon juice and zest in a mini food processor. Pulse to creamy texture. (Mixture can also be mashed together with a fork.) Season with pepper.
- Spread feta mixture evenly on toasted baguette slices. Top with cucumber slices and sprinkle with dill.
