DAD'S AWESOME MEATLOAF
My Dad made this meatloaf at least once a month and it was always my favorite dish. Even my meatloaf hating husband loves it! Sure to be a hit with both the meatloaf lovers and haters alike!

Steps:
- Mix hamburger, bread and juice together until well blended.
- Add eggs, pepper, salt and onion and mix together until well blended.
- Cook in loaf pan for 1 hour at 350°.
- Mix together brown sugar, ketchup and dry mustard.
- Place on top of meatloaf after 1 hour and cook for another 30 minutes.
BONNIE'S KILLER MEATLOAF
This is a delicious, moist and flavorful meatloaf, definitely company worthy, and it is our very favorite meatloaf recipe. Sandwiches made the next day are just awesome! My friend, Pattycake, shared this recipe with me, and now I am happy to share it with my JAP friends. Enjoy! Photos are my own.

- 1. In a large mixing bowl, combine eggs, tomato paste, kitchen bouquet.
- 2. Add all the seasonings and spices.
- 3. Stir in peppers, onions and celery.
- 4. Add the ground meat and sage sausage. Mix well. Best mixed with your hands.
- 5. Stir in the croutons and mix well.
- 6. Form the loaf and place in a meatloaf pan.
- 7. "Frost" the top of the meatloaf with the leftover tomato paste as depicted in the photo.
- 8. Tent the meatloaf loosely. Bake meatloaf in a 350 degree, pre-heated oven for 1 1/2 hours or until it reaches an internal temperature of 175 degrees. (I use a meat thermometer.) Remove tin foil the last 15 minutes. Let meatloaf stand covered loosely for 15 minutes. Spritz with a couple of sprays of butter flavored kitchen spray to give it a glossy appearance, and this is how it looks.
- 9. Place the meatloaf on a platter and slice it to serve. You can serve it without gravy because it is so moist. That is the way I like it. The guys, of course, have to have their gravy! Enjoy!
DAD'S CHEESY BACON WRAPPED MEAT LOAF
This is a recipe my dad has been making for years. Great for the cheese and bacon lover-- it's a huge hit with crowds, even kids! And it's a great comfort food!

- Preheat an oven to 375 degrees F (190 degrees C).
- Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. Lay 3 of the 4 pieces of Cheddar cheese across the center of the meat, lengthwise. Cover the cheese with the second half of the meat mixture and mold the meat into a loaf shape. Pull the ends of the bacon up and around the loaf. Spread 1 tablespoon of ketchup thinly over the loaf.
- Bake in the preheated oven until no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven.
- Cut the final piece of Cheddar cheese into slices and place on top of the meat loaf. Return the meat loaf to the oven and continue baking until the cheese is melted, about 5 minutes. Remove from the oven and allow the meat loaf to rest for 5 minutes before serving.

DAD'S MEATLOAF WITH TOMATO RELISH

- Preheat the oven to 350 degrees F.
- Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
- Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
- This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
- Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
- Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!
DAD'S MEATLOAF
Steps:
- Preheat the oven to 375 degrees F.
- In a large bowl, add all meatloaf ingredients and mix with your hands until combined. Do NOT overmix it! Divide the mixture between two 9 x 5-inch loaf pans and set aside.
- For the glaze, in a medium bowl, stir together the sugar, ketchup, and mustard. Brush the top of each meatloaf with a thick coat of the glaze. Transfer to the oven and bake until an instant-read thermometer inserted in the middle registers 150 degrees F, about 45 minutes.
- Let the meatloaves rest for 10 to 15 minutes, unmold, cut into slices, and serve.
DAD'S CHEESY BACON WRAPPED MEATLOAF
This is my dad's meatloaf recipe, that we've spent years "perfecting." This meatloaf is a huge crowd pleaser-- popular with anyone who loves cheese and bacon! My Dad did this meatloaf on the grill in a cast iron pan, but it's just as good in the oven!

- Preheat oven to 375 degrees.
- In a large bowl combine ground beef with eggs and 2 tablespoons ketchup.
- Once beef mixture is well mixed, add dry ingredients: breadcrumbs, Parmesan cheese, garlic, salt, oregano, basil, and pepper. Followed by the diced onions.
- Set mixture aside.
- In 9x13 pan, line the bottom of the pan with the strips of bacon-- the width, not the length of the pan (you can use a loaf pan, but I warn you, the meatloaf is greasy, and the loaf pan can get very full).
- Take half of the meat mixture and pat it across the top of the bacon. This should be the bottom part of your loaf. Take THREE of the four pieces of cheddar cheese and place them across the center of the meat mixture (this will be your cheesy center!).
- Take the second half of the meat mixture and add it on top of your cheese. Mold the meat into a loaf shape. The cheese should be completely covered and in the center of the loaf.
- Finally, pull the bacon and wrap it around the loaf. Take your final tablespoon of ketchup and thinly spread it across the top of meatloaf.
- Put meatloaf in oven and cook for 60 minutes.
- Take final quarter of cheddar cheese and cut in to slices.
- Place these final cheese slices on top of the meatloaf, and put meatloaf back into oven until the cheese is melted (approximately 5 minutes.) Let meatloaf sit for a few minutes to cool before serving.

KILLER HUNGARIAN MEATLOAF
First the name is a goof. This meatloaf has nothing to do with my being Hungarian except that I am so it's an appropriate title. This is an adaption of another recipe I found elsewhere (heavily changed too I add). I happen to think it's killer. Hope you do too.

Steps:
- combine first 10 ingredients in large bowl, I use my hands to break up meat then a spoon to add veggies.
- make a well in middle and add beaten eggs to bread crumbs in the well, then use spoon to mix with meat mixture.
- layer 1/2 meat mixture in 13 x 9 inch pan, (I prefer a glass pan).
- lay cheese over meat keeping it 1 inch from edge.
- layer the rest of the meat over the cheese and pat into shape.
- use a blender to puree tomato(s).
- add sugar and vinegar to pureed tomato, mix well then pour over meat loaf.
- bake at 375 degrees Fahrenheit for 1 hour 15 minutes.
- serve and enjoy.

DADDY'S DELICIOUS MEATLOAF (ABM) BREAD MACHINE
There's no reason for your bread machine to be limited to just bread! Dust it off and break it out to make this delicious, moist meatloaf. You'll need to use the quick bread or cake cycle. Directions for cooking this in the oven are included as well.

Steps:
- Break up the meat.
- Place all ingredients into bread machine and start on quick bread/cake cycle.
- When machine is done mixing, pause the machine, remove the paddle, and smooth the loaf down if you like.
- Mix the topping ingredients (3/4 cup ketchup with 3 Tablespoons brown sugar) together.
- Pour topping over the top of the meatloaf.
- When done baking, use a spatula and/or fork to remove the loaf from the pan.
- This can be made in the oven. Bake at 350 degrees Fahrenheit for 1 hour.
