DAIRY-FREE CHOCOLATE CHIP COOKIES WITH COCONUT OIL
When dairy was no longer an option, I discovered how useful coconut oil was as a substitute to butter. I was excited to learn how easy it was to bake with and how it leaves no detectable coconut flavor. My family was glad to be eating this old time favorite again - now dairy-free.

- Preheat the oven to 375 degrees F (190 degrees C).
- Combine coconut oil, white sugar, brown sugar, and vanilla extract in a large bowl. Refrigerate, stirring occasionally, until the coconut oil has thickened, but can still be stirred, about 5 minutes; the batter will lighten in color as it thickens. Add eggs to the batter one at a time, beating well after each addition.
- Combine flour, baking soda, and salt in a bowl. Gradually beat dry ingredients into the bowl with the coconut oil mixture. Stir in chocolate chips.
- Drop dough by the tablespoon onto ungreased baking sheets.
- Bake in the preheated oven until set and lightly golden, 8 to 10 minutes.
- Cool cookies on the baking sheets for 2 minutes, then transfer to wire racks to cool completely.

- Heat oven to 375ºF.
- Combine shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Beat in egg. Combine flour, salt and baking soda. Mix into shortening mixture until just blended. Stir in chocolate chips.
- Drop by rounded measuring tablespoonfuls 3 inches apart onto ungreased baking sheet.
- Bake 8 to 10 minutes for chewy cookies, or 11 to 13 minutes for crisp cookies. Cool 2 minutes on baking sheet on a cooling rack. Remove cookies to rack to cool completely.

- Whisk together flour, baking soda, and salt.

- Pre heat the oven to 170C/150c fan
- Cream the margarine and sugar in a bowl until pale and fluffy.
- Stir in the golden syrup
- Stir in the flour slowly, bringing the mixture together. It looks very thick and sticky at this stage.
- Add the chocolate and the milk and mix until all ingredients are fully combined.
- Place teaspoons of the mixture on a greased baking tray evenly spaced apart
- Put into oven for 8-10 minutes until golden. The cookies are very soft when freshly cooked. Leave them for 5 minutes before transfering off the tray to cool
- Cookies best eaten within 2 days
