DANG GOOD PIE

The name is right ... this pineapple coconut pie is dang good! It reminds us of a creamy pina colada. In each bite, you taste little bits of coconut and pineapple. It's super easy to make too. Just delightful!

Steps:

  • 1. Bake prepared pie crust at 350 for 10 minutes.
  • 2. Mix eggs in small bowl. Then melt butter. Mix all ingredients together in medium bowl. Do not drain the pineapple.
  • 3. Pour into prepared pie shell and bake. Bake at 350 for 45 min or until the center is set.

3 large eggs
1 1/2 c sugar
1 c shredded coconut
3 Tbsp all-purpose flour
1 c pineapple, crushed undrained (about an 8 oz can)
3/4 stick butter (6 Tbsp)
1 prepared pie crust

My Great Aunt Lola was an AWESOME lady and the best baker in the WORLD! She lived to be in her 90's, she passed away back in '82. She is still missed by everyone!! This is one of her pies with pineapple and coconut! Enjoy!

Steps:

  • Melt butter and mix with remaining ingredients.
  • Pour filling into unbaked pie shell.
  • Bake in 350° oven for 1 hour or until set and browned.

Name says it all. Good everytime! Reminds me alot of a banana split. Think ahead on this one, since there is extended time in the freezer and refrigerator before everyone can dig in.

Just a Darn Good Pie image

Steps:

  • Pre-bake pie shells. Cool them completely.
  • Beat cream cheese in a large bowl with electric mixer until smooth.
  • Mix in condensed milk.
  • Spread into shells, wrap in plastic wrap, and place into the freezer until firm (2-3 hours).
  • Arrange bananas over filling. Spread pineapple over bananas.
  • Beat cream until stiff peaks form. Spread over fruit.
  • Sprinkle on pecans and drizzle with chocolate syrup.
  • Chill in refrigerator one hour before serving.
