GLEN'S CREAMY CAKE FILLING (MOCK CREAM)
This is a really nice filling sandwiched between tiny meringues for serving with coffee or for piping onto cakes. It should be completely smooth with all grains of sugar completely dissolved. To make chocolate filling add 1-2 tablespoons cocoa with the icing sugar.

Steps:
- Dissolve icing sugar with very little boiling water, only enough to make it just slide into butter but not be watery.
- Beat butter until soft and creamy, then add icing sugar, a little at a time and beat until white and creamy - taste before all the icing sugar has been added to see if it is sweet enough, only add the rest if it is needed.
- Add 1 tbs of boiling water, beat again, then add 1 tbs cold water.
- Continue beating until smooth, keep adding alternately a little boiling water then cold water until sugary taste has gone.
CREAM FILLING
An awesome filling from a TOH recipe for "Cream Cake Dessert" by Peggy Stott. The cake wasn't anything special, but the cream is incredible! She suggests filling a yellow cake with it for a potluck, instead of icing it. Cooking time includes cooling.

- Combine flour and milk. Bring to a boil and stir until thickened. Cool completely.
- Cream everything else with an electric mixer. Beat in the cooled milk until the sugar is dissolved.
- Use as you desire. It tastes alot like a hostess cake filling, and would go great in chocolate cupcakes.

SIMPLE CAKE FILLING
My Grandmother has been using this for years! For those of you who love to bake a quick 2 layer cake, this filling is a must & goes great with fruit too! **NOTE** I recently used this filling for my son's 4th Birthday Cake (Pictured the Krabby Patty Cake in the photos) I used Jello's Brand Banana Cream Pudding and instead of adding 1 tsp of the Vanilla extr. I used 1 tsp of Coconut Extract. I put sliced Strawberries on top of that and it truly was a great tropical type of flavor! I also did the bottom tier with reg. Choco. Pudding and then sliced bananas on that. You can truly use so many types of Flavors. I did like the Banana w.Coconut flavor though! Yum!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan. In a saucepan, combine water and raisins. Bring to a boil and cook for 5 minutes. Remove from heat and stir in chopped dates and baking soda. Set aside.
- In a large bowl, cream together 1/2 cup butter and 3/4 cup white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour, salt and date mixture. Pour batter into prepared pan.
- Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove cake from oven, and set oven to Broil.
- Make Topping: In a saucepan, melt 4 tablespoons of butter. Stir in brown sugar, cream and chopped nuts. Spread mixture over warm cake and place under broiler until lightly browned, about 3 minutes. Watch carefully - it burns easily under the broiler. Cool before serving.

This is a filling that I spoon in between cake layers, especially for loaf cakes, such as carrot, zucchini and blueberry, it gives that extra "kick" to cakes --- If you are making a larger size cake I suggest to double the cream cheese mixture.

This is my grandma's adaptation to a recipe from a magazine called the "Farm Journal." I'll also list an easier Fudge Frosting I found in reference to this recipe on the internet.

- Cream together very thoroughly the shortening, sugar and vanilla. Add eggs one at a time and beat after each addition until light and fluffy. Beat in chocolate which has been slightly cooled.
- Measure sifted flour and sift together with soda and salt. Alternately add sifted dry ingredients and iced water to chocolate mixture, beginning and ending with dry ingredients. After each addition, beat until batter is smooth.
- Pour batter into 3 greased 8-inch layer cake pans. Bake at 350 degrees about 35 minutes, or until done. Cool and spread date cream filling between the layers and chocolate fudge frosting over top and sides.
- Date Cream Filling:.
- Heat milk and 1/2 pound chopped dates in top of double boiler.
- Combine sugar, flour and egg, blending until smooth. Slowly stir into hot milk mixture.
- Cook and stir until mixture is thickened. Cool then stir in nuts and vanilla.
- Makes 2 cups.
- Fudge Frosting (the original 1959 version):.
- Combine all ingredients in a heavy saucepan. Boil over high heat 3 minutes without stirring. Reduce heat and continue cooking until it reaches soft-ball stage (238 degrees). Cool.
- Beat until creamy and of spreading consistency. Add cream if too thick.
- Fudge Frosting (the easier 1972 version):.
- 2 cups sugar. 1/4 teaspoons salt. 1 cup light cream. 2 tablespoons light corn syrup. 2 squares unsweetened chocolate.
- Combine sugar, salt, cream, corn syrup and chocolate. Cook over low heat, stirring until sugar dissolves. Cover saucepan for 2-3 minutes. Remove lid and cook to the soft-ball stage (234 degrees). Cool.
- Beat until spreading consistency. Add a little hot water if too stiff, sifted confectioners sugar if too thin.

- Line 2 cookie sheets with cooking parchment paper, set aside.
- In large bowl, beat cream cheese, butter and 1 tablespoon sugar with electric mixer on medium speed until fluffy. On low speed, gradually beat in flour. On large piece of plastic wrap, form dough into 10x5-inch rectangle. Wrap in plastic wrap; refrigerate until firm, about 1 hour.
- Meanwhile, in 2-quart saucepan, stir together chopped dates, 1/2 cup water and 2 tablespoons sugar. Heat to boiling. Reduce heat to low; cook 5 to 8 minutes, stirring constantly, until thickened. Cool 5 minutes. Stir in orange peel, vanilla and walnuts; set aside.
- Heat oven to 325°F. Cut dough in half into 2 squares. On floured surface, roll out 1 square of dough into 10-inch square. Using fluted pastry wheel, trim edges; cut into twenty-five 2-inch squares. Spoon 1 teaspoon date mixture onto center of each 2-inch square. Bring 2 opposite corners of dough together, partially overlapping and covering date mixture. Using fingers dipped in water, press dough to seal. Arrange 1 inch apart on cookie sheets. Repeat with other half of dough.
- In small bowl, beat egg white and 1 tablespoon water; brush onto dough wraps. Sprinkle with coarse white sparkling sugar.
- Bake 13 to 15 minutes or until edges begin to turn golden brown. Cool 2 to 3 minutes. Remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.

- Preheat oven to 350 degrees F (175 C). Grease and flour two 8 inch round cake pans. Set aside. Put dates in a bowl with soda and pour boiling water on top. Set a side.
- In a large mixing bowl, mix together 1 cup sugar, 2 1/2 cups flour and 1 cup chopped walnuts. Add egg, 1 teaspoon vanilla, pinch of salt and tablespoon butter. Mix to combine. Finally, stir in chopped dates with liquid. Mix well. Pour batter into prepared pans.
- Bake for 25 to 30 minutes. Cake will pull away from sides of pans and be golden brown.
- In a medium saucepan, combine buttermilk, 1 cup sugar, pinch of salt and 4 tablespoons flour. Cook on medium heat until thickened. Stir in 1 teaspoon vanilla and remaining cup of walnuts.
- Spread mixture between layers and on top of cake. Let filling run down the sides of cake.
