FAMOUS DAVE'S COUNTRY ROASTED CHICKEN

I haven't made this one yet, but it sounds very good! Prep time does not include 3 hour marinating time.

Steps:

Mix ingredients for chicken seasoning.
Store in a covered container.
Place the chicken in a 2 gallon sealable plastic bag.
Pour a mixture of the Italian dressing and lemon juice over chicken, turning to coat.
Marinate in refrigerator for 3 hours, turning every 30 minutes.
Remove chicken from bag and drain.
Season generously with 1/3 cup Roast Chicken Seasoning.
Preheat the oven to 375.
Arrange chicken on a rack in a baking pan.
Tent loosely with foil.
Bake 1 1/2 to 2 hours or until a meat thermometer registers 170 to 180F, removing the tent 20 minutes before the end of baking process.
Let stand for 10 minutes before carving.

1/2 cup paprika
1/2 cup lemon pepper
1/2 cup Mrs. Dash seasoning mix
1 (6 lb) roasting chickens
2 (16 ounce) bottles Italian dressing
1 (8 ounce) bottle lemon juice
1/3 cup roast chicken seasoning (above)

DAVE'S MOCHA CHICKEN

An original chicken dish that works well! Serve plain, or use the cooked marinade as a sauce.

Steps:

In a medium, nonreactive container, mix the soy sauce, brown sugar, sherry, coffee, and 2 tablespoons olive oil. Place chicken legs in the mixture. Cover, and marinate in the refrigerator 3 to 4 hours.
Remove chicken from the marinade mixture, and set aside. Transfer the marinade to a medium saucepan, and bring to a boil.
Heat remaining olive oil in a medium skillet over medium-high heat. Season chicken with pepper, and brown on all sides in the skillet. Pour the hot marinade mixture into the skillet. Reduce heat, and simmer 30 minutes, or until chicken is no longer pink and juices run clear. Cool slightly before serving.

DAVE'S (VIRGIN) SPECIAL

My Dad created this very "Special" beverage for the children in our family who all love and ask for it when ever they visit. It's made with Wink or generic grapefruit soda, OJ, and maraschino cherry juice over ice, topped off with a cherry. You could frappe the drink if you want. He also serves them in tall glasses. *Note: Cooking time is None.

Add ice to glass.
Pour Wink and orange juice in glass and stir to mix.
Add maraschino cherry juice and top with cherry. Enjoy!
