This cocktail is like a chocolate after-dinner mint in a glass. Skip dessert and go straight for a grasshopper.

- Combine creme de menthe, creme de cacao, cream, and ice in a cocktail shaker. Cover and shake until chilled. Strain into chilled cocktail glass.

"GRASSHOPPER" CHOCOLATE MINT CHESS PIE/MILKSHAKE
Classic cocktails often are my starting point when coming up with unique recipe combinations. This pie/milkshake was inspired by the Grasshopper cocktail. I've taken the main ingredients; mint, cream and creme de cacao, used them in a slightly unusual way and created two desserts that when combined, make an awesome grown up milkshake.

Yield One 9-inch pie or eight 8-ounce shakes
Number Of Ingredients 16
Steps:
- Preheat oven to 350 degrees F.
- Blind bake the pie shell. Set aside to cool.
- In a small saucepan, melt the butter over medium heat. Add the chopped chocolate and remove from the heat. Mix until the chocolate is melted.
- Whisk in the sugar, eggs, liqueur, flour, salt, and vanilla. Pour the filling into the pie shell. Bake for 28 to 30 minutes, or until the chocolate moves slightly. Let cool completely on a rack at room temperature.
- Serve the pie by itself, topped with whipped cream.

When you've got a craving for mint ice cream this shake is awesome. From Sunset magazine. We make it without the creme de menthe for the kids and they love it. But the adult version is oh so delicious.

- Preheat oven to 350°. Whisk flour, chocolate chips, cocoa powder, salt, and baking powder in a medium bowl. Using an electric mixer on medium speed, beat butter, sugar, and vanilla in a large bowl until light and fluffy, about 4 minutes. Reduce speed to low and mix in dry ingredients until just incorporated, about 1 minute. Transfer dough to a large piece of plastic wrap and shape into a 1–1¼" thick log. Wrap tightly; chill until firm, 1–1 ½ hours.
- Slice dough crosswise into ¼–⅓" thick rounds and arrange on a parchment-lined baking sheet, spacing ½–1" apart. Bake, rotating baking sheets halfway through, until tops and sides are firm and dry to the touch, 16–20 minutes. Let cool.
- Purée ice cream, milk, and both liqueurs in a blender until smooth. Transfer to a small bowl or airtight container; cover and freeze until shake has returned to a thick consistency, about 2 hours.
