MY MEATLOAF
This is the meatloaf I taught myself how to make when I tried to duplicate my Daddy's meatloaf! It's a perennial family favorite! It's wonderful sliced cold the next day and used in a warm, toasted sandwich with a little butter.

Steps:
- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine the beef, ketchup, soup mix, bread, Italian-style seasoning and water. Mix well. Shape into a loaf and place into a 9 inch pie pan OR a 9x13 inch baking dish. Baste the top of the meatloaf with ketchup.
- Bake at 425 degrees F (220 degrees C) for one hour, or until the edges are just crispy and the top has a crust.
- Cool for 15 to 20 minutes before cutting.

- Preheat oven to 425 degrees, with rack in center position. Gently mix together meat and mustard. Form meat mixture into a 4-by-8-inch oval (1 1/2 inches thick) on a parchment-lined baking sheet.
- Combine ketchup and Worcestershire sauce in a small bowl; brush over surface of meatloaf to coat. Bake, rotating halfway through, until just cooked through and an instant-read thermometer inserted into the center reaches 160 degrees, 40 to 45 minutes. Let rest for 5 minutes before slicing.
DEAD MAN OVER WORMS (MEATLOAF OVER SPAGHETTI NOODLES)

- Preheat the oven to 350 degrees F.
- In a large bowl, beat the eggs. Add milk, bread, and oatmeal. Stir in carrots, onions, cheese, herbs, and seasonings. Add beef and sausage and mix well. In a shallow baking dish, shape beef mixture into the shape of a body. Round ball for head, oval shape for body, mounding up for tummy. Shape arms and place next to body. Shape legs and place next to each other, not apart. Smooth meatloaf so the "seams" are not apparent. Bake for 45 minutes, until meat is cooked through.
- While baking combine topping ingredients. Cook spaghetti noodles, according to package directions, rinse and set aside.
- After 45 minutes, spoon half of the topping over the meatloaf. Return to the oven and continue baking for an additional 30 minutes. Remove from oven and let stand for 10 minutes.
- Put spaghetti noodles on tray, carefully place meatloaf on top of spaghetti noodles. Pour remaining sauce on top of noodles.
- To serve, place a knife in the "heart" of the meatloaf and be ready for everyone to "cut-up!"
MAN'S MEATLOAF
This is a big, hearty meatloaf the stays juicy and doesn't dry out while cooking. I found the recipe in a cookbook and added some of my own little favorites

Steps:
- Preheat oven to 350 degrees.
- In a medium skillet, saute the onion, bell pepper and garlic until translucent. Drain.
- Combine the onion, bell pepper and garlic with all other ingredients except for the bacon in a large bowl. Mix well.
- In a medium casserole dish, form the mix into a loaf about 8-10" long and 4-6" wide.
- Cut bacon slices in half and place over loaf forming a covering over the entire loaf.
- Cover the dish with aluminum foil and bake for 1hr 30 minutes. Serve hot!

CLASSIC MEATLOAF
Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
- Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
- Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
- Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.

- Melt the butter in a skillet over medium heat. Cook and stir the garlic, onion, and celery in the hot butter until the onion has softened and turned translucent, about 10 minutes. Transfer the vegetables to a mixing bowl, and allow to cool to just warm. Preheat an oven to 350 degrees F (175 degrees C). Place a sheet of aluminum foil onto a baking sheet, and spray with nonstick cooking spray. Crack the eggs into the mixing bowl with the vegetables, and mix until the egg is smooth. Add the ground beef, Cajun seasoning, and bread crumbs. Mix with your hands until the mixture is evenly blended. Form the meat mixture into the shape of a stick man. Bake in the preheated oven until no longer pink in the center, about 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Once done, place the olive halves onto the head for eyes, and pour the ketchup onto the abdomen. Return to oven, and bake 10 more minutes. Serve with a plastic knife impaled in the abdomen for effect.
