CAULIFLOWER SANDWICH FILLING
The age old question - what to do with cauliflower? This is a fabulous sandwich filling reminicent of egg salad. Delicious with sliced tomatoes or bits of broccoli added, and great stuffed into a pita. Also great on whole wheat toast. Healthy too!

Steps:
- Wash and chop the cauliflower into small pieces. Steam in vegetable steamer or microwave until tender (about 5-8 minutes for small chunks).
- Drain cauliflower well. Place in bowl and mash with potato masher until crumbly.
- Add remaining ingredients and mix well. Season to taste.
- Spread filling onto whole wheat vegan bread or stuff into pita. Garnish with tomato slices (or any other vegetable you like on sandwiches).
- Enjoy!

DELICIOUS CAULIFLOWER N CHEESE SANDWICH FILLING
This is a personal favourite of mine. I found this recipe in Anjali Vellody's Foodcourt column of the Weekend magazine. Hope you enjoy it!

Steps:
- Heat oil in a non-stick pan.
- Add onion and stir-fry until its transparent (about 5 to 7 minutes).
- Add cauliflower and stir-fry for 4 minuts.
- Add corriander, cumin, garam masala and red chilli powder.
- Mix in the grated Maggi cube powder.
- Add few tbsps.
- of water to cook the cauliflower.
- Cook until the mixture is dry.
- Add chopped corriander, mint and grated cheese.
- Mix well.
- Transfer this filling onto a plate and allow to cool.
- Divide it into 2 portions.
- Place each portion between 2 bread slices.
- Toast in a sandwich toaster.
- Serve hot.
- Enjoy!

SAVOURY CHEESE - TRADITIONAL BRITISH SANDWICH FILLER
This is a gorgeous, mellow sandwich filler I have discovered in Britain and got absolutely hooked on! It's a very savoury and cheesy filling with a lovely melt-in-the-mouth texture which makes it the ultimate comfort food. Attention - some people my find this quite smelly, but it's worth it!

Steps:
- mix the cheeses in a bowl.
- add mayonnaise to desired creamyness (don`t be too skimpy, though!).
- Add pepper and salt, finely diced spring onion and finely diced onion in quantities that suit you.
- TIPS:
- You may omit the Red Leicester and Mozzarella Cheese and use only Cheddar or similarly strong cheese.
- This tastes best if made the day before and not served straight from the fridge.
- Can be used as filler for sandwiches and baked potato (traditional), but is also gorgeous as a dip for vegetable crudities.

- Cheesy apple slaw Mix their favourite grated hard cheese with grated apple, chopped spring onions, a squeeze of lemon and a little mayonnaise. Delicious with wholemeal bread or rolls.
- Salmon smash Mash up a drained and boned can of red salmon with a little tomato ketchup. Spread onto wholemeal or granary bread and sprinkle with lots of mustard and cress.
- Tandoori chicken wraps Roll chapattis or flour tortillas around a filling of ready-cooked tandoori chicken pieces, shredded lettuce and chopped tomato. Serve with dollops of bought chunky cucumber raita.
- Scout's MCC Try Marmite, grated cheddar and sliced cucumber in a crusty baguette or ciabatta roll - they'll either love it or hate it!
- Cream cheese & roasted red pepper bagels Fill onion or regulars bagels with soft cheese and roasted peppers from a jar.
- Creamy smoked mackerel Skin and flake smoked mackerel fillets,then mix with a little mayonnaise and Greek yogurt. Spread onto thick wholemeal bread and top with crisp lettuce leaves.

- Place oven racks in upper and lower thirds of oven. Preheat to 425 degrees F. Line one large baking sheet with parchment paper.
- Place cauliflower in a food processor. Process until finely grated. Transfer to a microwave-safe bowl. Cover loosely and microwave on High for 3 minutes. Let cool slightly. Transfer the cauliflower to a clean kitchen towel and wring out excess moisture. Return to the bowl and stir in Cheddar, egg, pepper and salt until thoroughly combined. Using about 1/4 cup of the cauliflower mixture for each, create eight 3-inch squares on the prepared baking sheet.
- Toss pepper and onion with oil on a large rimmed baking sheet. Bake the cauliflower squares and the vegetables, switching the pans in the oven halfway through, until the cauliflower is browned and crispy around the edges and the vegetables are soft, 20 to 25 minutes.
- Lightly oil a large nonstick skillet; heat over medium heat. Chop the peppers and onions. Place about 1/4 cup pepper mixture and a slice of cheese on one cauliflower "toast." Top with a second cauliflower "toast." Repeat with the remaining cauliflower toasts, vegetables and cheese. Cook, turning once, until the cheese is melted, about 4 minutes total.

- Preheat oven to 450°F. Place cauliflower into food processor and pulse until crumbs about half the size of a grain of rice.
- Place cauliflower into large microwave-safe bowl and microwave for 2 minutes. Your cauliflower should be soft and tender (and hot!). (If you don't want to use the microwave to dry out the cauliflower and prefer to steam and wring with a cloth to dry, check out my wringing instructions here.)
- Stir cauliflower to mix up the bottom and top cauliflower. Place back into the microwave and cook for another 3 minutes. Remove and stir again so that all the cauliflower cooks evenly. Place back into microwave and cook for 5 minutes. At this point, you should see the cauliflower is starting to become more dry. Microwave for another 5 minutes. Cauliflower should still be slightly moist to the touch, but should look dry and clumped up (like photo above; similar to as if someone had chewed it up and spit it back out.) If you've made cauliflower pizza or breadsticks with the cloth wringing dry method, it should look the same.
- Allow cauliflower to cool for a few minutes. Then add in egg and cheese. Stir to combine until smooth paste forms. Stir in seasoning. Divide dough into 4 equal parts. Place onto large baking sheet lined with parchment paper. Using your knuckles and fingers, shape into square bread slices about 1/3 inch thick. Bake cauliflower bread for about 15-18 minutes or until golden brown. Remove from oven and let cool a few minutes.
