SKINNY SPINACH DIP IN A BREAD BOWL

Try this healthified version of our classic Spinach Dip in a Bread Bowl. Nobody will know the difference.

Skinny Spinach Dip in a Bread Bowl image

Steps:

  • Cook spinach as directed on boxes; cool. Squeeze water from spinach; discard water. In large bowl, mix all ingredients except bread. Cover and refrigerate at least 1 hour to blend flavors.
  • Just before serving, cut 1- to 2-inch slice from top of loaf. Hollow out loaf by cutting along edge with serrated knife, leaving 1-inch shell, and pulling out large chunks of bread. Cut or tear top slice and hollowed-out bread into bite-size pieces.
  • Place hollowed-out loaf on serving plate; fill with spinach dip. Arrange bread pieces around loaf to use for dipping.

2 teaspoons chopped fresh tarragon leaves or dill weed
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 clove garlic, finely chopped
1 lb round loaf unsliced 100% whole wheat bread

Skinny Spinach Dip with Artichokes image

Steps:

  • Heat oven to 350°F. Spray 1-quart shallow glass baking dish or 9-inch glass pie plate with cooking spray.
  • Place spinach in 2-quart microwavable casserole; add 1/4 cup water. Cover; microwave on High 2 minutes. Drain well, pressing spinach with paper towels to remove excess liquid. Chop spinach.
  • In large bowl, beat cream cheese with spoon until smooth. Beat in mayonnaise, 3 tablespoons of the Parmesan cheese, the milk, garlic and basil until well blended. Stir in spinach and artichokes. Spread evenly in baking dish. Sprinkle with remaining tablespoon cheese.
  • Bake 20 to 25 minutes or until thoroughly heated. Serve with baguette slices or raw vegetables.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix artichoke hearts, spinach, cream cheese, sour cream, Romano cheese, Parmesan cheese, roasted peppers, garlic, and lemon juice together in a baking dish and top with croutons.

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

Creamy Cheesy Spinach Dip image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. Pour the mixture into the prepared baking dish and top with 1/2 cup mozzarella cheese.
  • Bake in preheated oven until bubbly and golden brown on top, 20 to 25 minutes.

I love the traditional Knorrs Spinach Dip but I'm no longer 20 years old and sour cream is something we limit. So I got the idea to try the recipe with some substitutions. Switch the sour cream for non-fat plain Greek yogurt and only use 2 heaping teaspoons of mayo. And we loved it. We felt we were having a real treat. My husband couldn't stop eating it.
