Steps:

  • In a large, heavy saute pan, heat 2 tablespoons of the oil over medium-high heat. Add the chicken livers and sausage and cook, stirring, until the meat is browned, about 6 minutes. Add the remaining tablespoon of oil, the onion, bell pepper, celery, garlic, Essence, salt and pepper, and cook, stirring, for 5 minutes. Add the stock and bay leaves and scrape the bottom of the pan to loosen any browned bits. Bring to a boil, then lower the heat and simmer for 5 minutes. Add the rice and stir thoroughly. Cook until the rice is heated through, about 5 minutes. Remove from the heat and remove the bay leaves. Stir in the parsley and serve.

DIRTY RICE

This is an old Louisiana recipe that I've had longer than I can remember. It's a very popular Southern dish. To turn this into a main meal, simply add more sausage and chicken livers. -Mrs. Lum Day, Bastrop, Louisiana

Steps:

  • Heat the oil in a large skillet over high heat. When the oil is hot, add the pork and chicken livers and cook, stirring, until browned. Add the salt, black pepper, and chili powder and stir often, but resist the impulse to stir constantly: You want the meat to stick to the pan and get crusty. Add 1/4 cup of the chicken broth and cook until it has evaporated, allowing the meat mixture to get browned and crusty and stick to the pan once again. Add the onion, celery, garlic, jalapeño, and oregano and cook, stirring, until the vegetables are nicely browned and crusty and beginning to stick to the pan. Add the rice, the remaining 1 1/4 cups broth, the scallions, and parsley. Stir until the liquid is absorbed and the rice is heated through.

2 tablespoons canola oil
4 ounces ground pork
1/2 cup chicken livers (about 4 ounces), pureed
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon chili powder
1 1/2 cups chicken broth
1 small onion, finely chopped
2 celery stalks, finely chopped
2 garlic cloves, minced
1 jalapeño pepper, stemmed, seeded, and finely chopped
1 tablespoon dried oregano
3 cups cooked rice
1/2 bunch scallions (white and green parts), chopped
2 tablespoons chopped parsley

  • Process chicken livers in a food processor until very smooth, about 45 seconds. Heat canola oil in a large skillet over medium-high; add ground pork and chicken liver puree, and cook, stirring to combine, until browned, about 4 minutes. Stir in salt and Old Bay. Add 1/4 cup of the chicken stock; stir and scrape bottom of skillet to loosen any browned bits. Continue to cook, stirring occasionally, until all liquid has evaporated, and some browned bits are again accumulating on bottom of skillet, 5 to 6 minutes. Add onion, celery, bell pepper, jalapeño, and garlic; cook, stirring often, until vegetables are softened, about 6 minutes.
  • Crumble rice, making sure to separate the grains as much as possible. Add rice, scallions, parsley, and remaining 1 1/4 cups stock to skillet; stir to combine all ingredients. Cook, stirring often, until most of the chicken stock has evaporated and mixture is heated through, 3 to 4 minutes.
