DELUXE BAKED MACARONI AND CHEESE
I've been cooking and baking for many years, but I've only recently begun creating my own recipes. By adding diced ham, tomatoes, several cheeses and a hint of Dijon mustard, I turned this super creamy mac and cheese into the ultimate comfort food. -Kathy Yarosh, Apopka, Florida

- Preheat oven to 350°. Cook macaroni according to package directions. In a Dutch oven, whisk flour, milk and cream until smooth. Bring to a boil; cook and stir 2 minutes or until thickened., Stir in cheeses until melted. Add tomatoes, ham, sour cream and mustard. Drain macaroni; add to cheese mixture and toss to coat., Transfer to a greased 13x9-in. baking dish. In a small bowl, mix topping ingredients; sprinkle over top. Bake, uncovered, 25-30 minutes or until bubbly and bread crumbs are lightly browned.

- Cook elbow macaroni accroding to package directions; drain wll and set aside.
- Place macaroni and next 8 ingredients in a large bowl, stir gently to combine.
- Spoon mixture into a lightly greased 2 quart baking dish.
- Combine breadcrumbs, melted butter, and parika in a small bowl, stirring well.
- Sprinkle breadcrumb mixture diagonally actoss top of casserole, making stripes.
- Bake at 350 degrees for 30 to 40 minutes or until golden brown.

DELUXE MACARONI AND CHEESE
This is yet another recipe from a TOH cookbook, although I have been making it so long that now I have a handwritten copy and am not sure what was original to the recipe and what I have added. I like this kind of mac and cheese with the almost curdled look as opposed to the velveeta kind but really I would eat just about any mac and cheese offered me, I love it that much.

- In a large mixing bowl, combine the cottage cheese, sour cream, egg, salt, garlic salt and pepper. Add Cheddar cheese, mix well. Add cooked and drained macaroni and stir until coated.

DELUXE MEXICAN MAC & CHEESE
Steps:
- Boil macaroni as directed, adding the corn with the macaroni.
- Sprinkle Creole seasoning over ground beef, onion and green pepper and brown in microwave. Drain off fat then coat meat with taco seasoning and add salsa. Heat in microwave until hot.
- Drain macaroni and corn and return to pan. Stir in cheese packet, 1/2 cup Mexican cheese and ground beef & salsa mixture. Serve topped with more Mexican cheese and salsa! Enjoy!

- SPRAY crockpot with cooking spray.
- DUMP pasta, then all other ingredients (except garnishes) in your crockpot.
- COOK ON HIGH for at least 45 minutes without disturbing; from that point on, stir every half hour or so, checking to see if the pasta is done (based on the reviews it can take anywhere between 45 minutes and two hours). When your pasta is cooked, proceed to Step #4.
- SERVE -- topped generously with green onions and crushed tortilla chips! Be sure to turn off the crockpot or switch to the warm setting, so the pasta doesn't get mushy.

- Place water, salt, onion, garlic and bay leaf in a saucepan. Turn heat to medium-high. Once the water starts boiling, add the pasta. Cook for 10 minutes. Drain and reserve the onion and garlic.
- Place cheese, roasted bell pepper, evaporated milk and reserved onion and garlic into your blender pitcher. Process until you have a smooth sauce. Set aside.
- Melt butter in a skillet over medium-high heat, making sure not to burn it. Once it has melted, add the cheese and bell pepper sauce. Cook for about 3 minutes, stirring from time to time. Season with salt and pepper.
- Mix the pasta with the sauce and cook for another 2 more minutes, just enough time to mix well.
