PARTY PUFFS
For a substantial appetizer, you can't go wrong with mini sandwiches. Instead of serving egg or ham salad on ordinary bread, I like to present them on homemade puff pastry.-Karen Owen, Rising Sun, Indiana

Steps:
- In a saucepan over medium heat, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. , Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Drop by teaspoonfuls 2 in. apart onto greased baking sheets., Bake at 400° for 20-25 minutes or until lightly browned. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool completely., In separate bowls, combine the ingredients for egg salad filling and ham salad filling. Split puffs and remove soft dough from inside. Just before serving, spoon fillings into cream puffs; replace tops. Refrigerate leftovers.

- Combine all ingredients in a food processor and blend until smooth. Use as a sandwich filling or spread on crackers for a snack.
HOMEMADE DEVILED HAM SANDWICHES
You will never again buy a ham spread product after tasting this recipe. Use your mini chopper or food processor to whip up a large or small batch. Easily modified for personal tastes, but try it once as written - it is delicious - AND - it's low-fat too! Make delicious sandwiches on your choice of bread with a thin coat of mayo, sliced bread and butter pickles, and a generous layer of Deviled Ham. Men and kids love these.

- Place ham and onion into a food processor and process until very finely chopped.
- Transfer ham mixture to a bowl. Thoroughly mix in salad dressing, honey, prepared mustard, Worcestershire sauce, dry mustard powder, hot pepper sauce, paprika, salt, and white pepper.
- Refrigerate ham spread covered until ready to use.

HOMEMADE DEVILED HAM SPREAD
I searched for a recipe for this on this site and couldn't find one, so I winged it and it turned out very nicely. I had to make a second batch to take to the New Year's Eve party because the first batch disappeared. A great way to use leftover ham from holiday dinner to make a great spread for hearty crackers or rye toast points. Also good as a sandwich.

- Place ham, mayonnaise, mustard, hot pepper sauce, garlic powder, onion powder, celery salt, black pepper, paprika, and caraway seeds in a large mixing bowl. Stir to combine.
- Use an immersion blender or food processor to puree the ingredients to your desired texture; stir in onion and celery. Chill before serving.

HAM AND CHEESE CREAM PUFFS
Cream puffs are a family favorite, but I prefer them savory and not sweet, so this is my take on a unique appetizer that disappears quickly! Crab, chicken or other cooked meat could be used to replace ham.

- In a small bowl, beat the cream cheese, mayonnaise and milk until blended. Stir in the ham, cheese, pepper, chives, parsley and garlic. Cover and refrigerate until ready to use., In a large saucepan, bring the water, butter, seasoned salt, garlic powder and onion powder to a boil. Add flour all at once and stir until a smooth ball forms., Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Steps:
- Blend together the cheese, onion juice, baking powder, egg yolk, and salt.
- Toast the bread round on one side.
- Spread the untoasted side with deviled ham and cover each with a mound of the cheese mixture.
- Place on ungreased cookie sheet and bake at 350 degrees for 10 to 12 minutes or until puffed and brown.
- Serve hot.

- 1. COMBINE FIRST 7 INGREDIENTS IN A MEDIUM BOWL AND MIX WELL. CHILL COVERED FOR 1 HOUR.
- 2. PRE HEAT OVEN TO 400 DEGREES
- 3. PLACE BUTTER AND WATER IN MEDIUM SAUCEPAN. BRING TO A ROLLING BOIL OVER HIGH HEAT. GRADUALLY STIR IN FLOUR AND SALT, STIRRING CONTINUALLY OVER LOW HEAT UNTIL MIXTURE FORMS A BALL. ABOUT 1 MINUTE. REMOVE FROM HEAT. ADD EGGS AND BEAT UNTIL DOUGH IS SMOOTH AND GLOSSY.
- 4. DROP BY ROUNDED TEASPOONFULS ONTO BAKING SHEET. BAKE UNTIL PUFFED AND GOLDEN BROWN, ABOUT 25 MIN. REMOVE TO WIRE RACK TO COOL
- 5. CUT OFF TOP OF EACH PUFF AND RESERVE. REMOVE SOFT CENTER AND DISCARD. SPOON 1 ROUNDED TEASPOONFUL OF HAM MIXTURE INTO EACH PUFF. REPLACE EACH TOP.
